►Today I’ll show you how to make a quick and healthy cabbage stir fry, it’s a classic Chinese veggie dish which you can find it very often on Chinese family’s dining table and also in the Chinese restaurants. It’s super crunchy and tender. It tastes garlicky, a little bit sweet, a little bit tangy and spicy. If you need one more veggie dish for dinner, that’s the one to go to. Plus, it is totally vegan.
►Here is my full recipe:
Ingredients:
1. 400g cabbage leaves
2. 1 tsp Sichuan peppercorns (optional)
3. 1 tsp dry Sichuan chili(optional)
4. 4 cloves garlic
5. 1- ½ tbsp (20 ml) oil
6. ½ tsp salt
7. 1 tsp light soy sauce
8. 1- ½ tsp Zhenjiang vinegar
9. 1 tsp sugar
Instructions:
1. Prepare 400g loose cabbage leaves.Cut off the tough stalk in the middle of each leaf, so we only use the tender leafy part to cook this dish. The stalks can be used in other dishes(for example, dice them up to add in the dumpling filings, or make pickles). If you don’t want to do this, just leave them on, it’s totally fine. Then tear the leaves in to about 4-5 centimetre squares. you can also cut them into pieces with a knife. But hand-torn cabbage will be more crunch and tastier when it's cooked.
2. Then dice 4 cloves of garlic.
3. You can also add some dried chili or chili flakes if you like it spicy.
4. Put a wok or a pan on medium heat, add in 1-1/2 table spoon oil. then add in 1 tsp Sichuan peppercorns. Sauté for about 1 min or until aromatic. Take them out before they are getting burned. (If you don’t like the flavour of this pepper, just ignore this step, it’s totally optional).Then add in the garlic and chili, fry them until the garlic turn golden brown. then add in the cabbage. cook it on medium to high heat. Keep on stirring or use the wok tossing skill to prevent it getting burned on the bottom and help the cabbage get cooked evenly. Add in ½ tsp salt. then put in 1 tsp light soy sauce, 1- ½ tsp Zhenjiang vinegar. and keep on stirring. Then add in 1 tsp sugar, mix it in. Keep on cooking until tender.
(How long it takes depends on how tender you want it and also depends on
what type of stove you have. It took me about 7 mins.)
5. Transfer it in to a plate. then enjoy it.
► 2 important tips to achieve crunchy vegetable stir fry:
The first one is do not cover it with a lid during cooking, the second one is do not add in any water.(Because you want to avoid steaming or boiling the cabbage, which will make vegetables soggy.)

Thai-style vegetable stir-fry is similar to Chinese vegetable stir-fry. The main difference is the inclusion of fish sauce and Golden Mountain sauce, giving you an authentic, unmistakenly Thai flavor.
And it usually does not thicken with cornstarch slurry, which means you have a thin sauce that is ideal for mixing with your Jasmine rice.

Ingredients A (vegetables)
200g Chinese broccoli (Gai Lan), separate the stems from the leaves
100g cauliflower, cut into small florets
50g carrots, cut into wedges
20 snow peas, remove the strings, and cut into half
6 baby corns
70g cabbage, cut into 2/inch pieces
5 dried shitake mushrooms, soaked to soften and cut into strip
Ingredients B (others)
1 tbsp chopped garlic
3 bird’s eye chili, bashed (optional)
2 tbsp vegetable oil
Ingredients C (sauce)
2 tbsp Golden Mountain sauce
2 tbsp fish sauce
2 tbsp oyster sauce
2 tsp sugar
2 tbsp water
Method
Preparation
- Separate the leafy and stem parts of the Chinese broccoli
- Cut the stem of the Chinese broccoli on the bias into thin slices.
- Separate the cauliflower into small florets,
- Cut the carrot into wedges by rolling it while slicing it.
- Soak the dry shiitake mushrooms in water until fully hydrated, then cut them into strips.
- Remove the fibrous string of the snow peas. Cut each pea into half on the bias.
- Cut the cabbage into two inches pieces.
Cooking
- Saute the chopped garlic and the bashed chilies with vegetable oil.
- Add the cauliflowers, cabbage, and carrots, and stir-fry over medium heat for two minutes. You may add a few splashes of water if it is too dry.
- Next, include the Chinese broccoli stems, the shitake mushrooms, and the premixed stir-fry sauce (Ingredients C). Stir fry for a minute.
- Lastly, include the leafy part of the Chinese broccoli and snow peas,
- Continue to stir fry over medium-high heat for half a minute, and it is ready to serve.`

No cooking oil, stir fry with water! Bacon cabbage stir-fry! 培根手撕莲白
This simple Chinese cabbage stir fry is a tradition in my family, My grandma used to make it all the time, but she used pork belly. Here I use regular bacon instead because for most of you, pork belly is hard to find. Also you can use Beef or Chicken fat for this dish.
If you are vegan, skip the bacon, just use cooking oil to stir fry the cabbage.
The Sauce:
2 tbsp soy sauce
1 tbsp Chinese vinegar
1 tsp Sugar
Pinch of Salt
1 tsp Corn starch
1 tbsp water
You also need :
The cabbage I use is a flat pumpkin-shaped cabbage (sometimes known as Taiwanese cabbage), white cabbage.
5-6 pieces of Bacon
1/2 tsp Sichuan pepper corn
6-7 Dried chili peppers
