How To Make Instant Pot Hoppin' John | Recipe | Well Done
HOPPIN' JOHN
Ingredients;
1LB of Field Peas
3 - 5 Pieces of Smoked Pork Neckbones (or Turkey)
16 1/2 total cups of water (water will reduce during cooking process)
4 Cups of Parboiled Rice
3 - 5 Slices of Salt Jowl (optional)
Seasonings of Choice
1 Tsp of Kitchen Bouquet (optional)
Directions - Please use your own judgement when following these directions. You may or may not need to use as much liquid as I did. It all varies.
1. Fry salt jowl in a large pot for about 5 minutes to render fat.
2. Add neckbones and 10 cups of water and bring to a boil.
3. Lower heat and allow to cook for 1 hour and 15 minutes. Check for tenders of meat and reduced water level after time is up. If meat is not tender and water is considerably reduced, add 4 more cups of water and cook an additional 30 minutes.
4. Once meat is tender, take off stove and let meat cool in a bowl.
5. Once meat is cool, remove from bones and add back to pot.
6. Add rice and more water if needed.
7. Add more seasonings to taste.
8. Cover and bake in the oven on 325 for 1 hour and 20 minutes.
9. Once time has passed, remove from oven and mix well.
10. Serve hot as a side or main dish. Enjoy!

Hoppin' John Southern Cajun Black Eyed Peas Recipe Details:
1 lb of black-eyed peas (soaked)
4 sliced smoked bacon thick-cut or preferred
sausage link (Kielbasa Sausage by Hillshire Farms) I used turkey but use preferred
bell peppers, red/green diced
2 bay leafs
4-5 garlic cloves
2- 3 Stalks of Celery
1 onion diced
black pepper to taste
cajun seasoning
smoked paprika
1 tsp thyme dried or fresh
1 tbsp chicken bouillon + 4 cups of water combined
3 cups of water
parsley fresh garnish
