How To make Harvest Sweet Potato Pie
1 ea 9" single pie crust
1 1/4 c Mashed cooked sweet potatoes
1/2 c Light brown sugar, packed
1/2 t Salt
1/4 t Ground cinnamon
Pinch ground nutmeg 2 lg Eggs, slightly beaten
1/2 c Plain yogurt
1/4 c Milk
1 T Unsalted butter, melted
Pecan halves Sweetened whipped cream
Heat oven to 400 degrees. Stir sweet potatoes, brown sugar, salt, cinnamon and nutmeg in a large bowl until well blended. Whisk in remaining ingredients EXCEPT pecan halves and whipping cream. Spoon into pie shell. If desired, arrange pecan halves in a decorative circle around edge of pie. Bake pie in center of oven 45 minutes or until the tip of a pointed knife inserted in center of pie comes out clean and crust is golden brown. Cool pie on wire rack until room temperature. Serve with whipped cream.

This recipe is as near as near and dear to me as sweet potatoes are to my home state, North Carolina. My mom made the best sweet potato pies and in honor of Mother’s Day and the awesome mom she was, I’m sharing her sweet potato pie recipe with y’all! INGREDIENTS
2 c. (4-5 medium) sweet potatoes
3 c. sugar
3 eggs
¾ cup whole milk (or canned evaporated milk (NOT sweetened condensed)
1 tsp. vanilla extract
Pinch of salt
Pumpkin Pie Spice
1 stick butter
2 unbaked deep dish pie crusts
DIRECTIONS
Pre-Heat oven to 350 degrees
Boil potatoes until fork tender, drain and peel
Mix all ingredients in stand mixer (or with hand-mixer)
Pour into pie crusts
Bake for 55-60 minutes until firm
Top with whipped cream

1-tablespoon of fresh lemon juice
2-tsp of nutmeg
1/2 cup of flaked coconut
1/4 tsp salt
2- deep dish pie shells
