1/3 c Water
1/2 c Shortening
1/4 c Butter or margarine
4 1/2 c All-purpose flour
2 ts Baking soda
1 pn Salt
1 1/2 ts Ground ginger
1 ts Ground cinnamon
1 1/2 c Molasses

Combine first 3 ingredients in a small saucepan. Cook over medium heat, stirring constantly, until shortening melts. Combine flour, soda, salt, ginger, and cinnamon; add shortening mixture, stirring well. Stir in molasses; chill 8 hours. Divide dough in half; store 1 portion in
refrigerator. Roll dough to 1/4-inch thickness on a lightly floured surface. Cut with a 5-inch gingerbread man cutter, and place on lightly greased cookie sheets. Press currants into dough for eyes, nose, and mouth. Bake at 350 degrees for 10 minutes. Cool cookies 2 minutes on cookie sheets; remove to wire racks, and cool completely. (Cookies will be soft.) Repeat procedure with remaining dozen. -----

???? The Ingredients To Make Gingerbread Cookies
[The Dough] It makes about 3 dozen cookies.
• Unsalted butter (soft): 160 g | 5.6 oz (1 1/2 sticks)
• Light brown sugar: 150 g | 5.3 oz (3/4 Us cup)
• Egg: 50 g | 1.7 oz (1 medium-large egg)
• Molasses: 150 g | 5.3 oz (1/2 US cup)
• Vanilla extract: 1 tsp
• All-purpose flour: 470 g | 16.5 oz ( 3 3/4 US cups * Calculated as 1 cup = 125 g)
• Baking soda: 1 tsp
• Salt: 1/4 tsp
• Ginger: 1 Tbsp
• Cinnamon: 1 Tbsp
• Nutmeg: 1/2 tsp
• Clove: 1/2 tsp
Bake (Preheated) at 350 F | 176 C for 7 - 10 mins.
* Adjust the time and temperature accordingly.
* Bake longer when using a bigger cookie cutter.
[The Icing]
• Powdered sugar: 240 g | 8.8 oz (2 US cups)
• Whole milk: [for the icing to draw lines] 2 Tbsp + 2 tsp, [for the icing to fill spaces] 3 Tbsp
* Make a half batch for simple decorations or when you are not decorating all the cookies.

GINGERBREAD COOKIES | gingerbread man recipe
Hello everyone! This is my favorite gingerbread recipe. The cookies are soft and very aromatic. Keeps soft for a long time when stored in a closed container.
INGREDIENTS:
150g honey
100g granulated sugar
1tsp ground cinnamon
1tsp ground ginger
1/2 tsp ground cloves (optional)
2 tsp baking soda
130g unsalted butter (room temperature)
1 egg
400-450g flour
COOKING METHOD:
1. Put honey, sugar, and spices in a saucepan. Bring to a boil, stirring occasionally.
2. Remove from heat and add baking soda, stir (the mixture will foam and increase).
3. Add butter gradually and stir. Add egg and stir.
4. Add sifted flour and knead the dough (I took a hand mixer with hook attachments). Form a ball.
5. Roll out the dough 5mm thick between two sheets of parchment or silicone mats. Put in the refrigerator for 30 minutes-1 an hour.
6. Cut out the cookies and transfer them to a baking sheet covered with parchment paper.
7. Bake at 350F/175C for 10 minutes.

Gingerbread Cookies Recipe
Gingerbread Cookies are some of the favorite cookies to be prepared for Christmas. The spices used and molasses give an amazing flavor and the aroma while baking is amazing. Kids really enjoy making them during the holiday season.

Ingredients
Makes about 3 dozen cookies
2 1/2 cups (315g) flour
1/3 cup (75g) dark brown sugar
1/2 tsp (3g) salt
1 tsp (3g) ground cinnamon
2 tsp (4g) ground ginger
1/2 tsp (2g) ground nutmeg
1/4 tsp (1g) ground cloves
1 tsp (6g) baking soda
1/2 cup (113g) butter, room temperature
1/3 cup (100g) molasses
1 egg
Sugar Icing
1 cup (120g) powdered sugar
1-2 tbsp (15-30ml) lemon juice or milk
1. In a large bowl whisk dry ingredients together: flour, salt, spices and baking soda.
2. In another bowl cream butter with sugar. Add the egg and molasses and mix well.
3. Incorporate dry ingredients to the butter mixture and stir until the dough comes together. Divide the dough in two discs and cover each with plastic wrap and refrigerate for at least 1 hour up to 3 days.
4. Roll the dough between two layers of plastic wrap, or between two layers of parchment paper until 1/8 inch (2-3 mm) thick. If you want them crispy roll the dough very thin. If you want them softer roll it out thicker.
5. Preheat oven to 350 F(180C). Line two baking sheets with parchment paper.
6. Cut the dough into desired shapes using the cookie cutters. Re-roll the remaining dough and cut more shapes. I use a fork to remove the dough between the cookies. Place the cookies onto the prepared baking sheets, leaving a little space between them.
7. Bake for 7 to 10 minutes (depending on the cookie size). Allow to cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.
8. To make the icing simply combine powdered sugar with milk or lemon juice. Spoon the icing into the piping bag and decorate the gingerbread cookies as desired. Allow to set.
