Cranberry Pecan Cheese Log
This easy cheese log recipe requires just 5 ingredients! It's the ultimate crowd pleaser and makes the perfect finger food at gatherings. Chris x

INGREDIENTS
9oz / 250g Cream Cheese
1 cup / 150g Dried Cranberries, roughly diced
1 cup / 125g Pecans, roughly diced
1 cup / 100g Sharp Cheddar Cheese, grated
1/4 cup / 4 tbsp finely diced Chives (could sub spring onion)

In a small mixing bowl combine diced pecans, cranberries and chives.
In a large mixing bowl add cream cheese & cheddar, then use a spatula to combine with HALF of the pecan mix (save the rest to coat the outside).
Add the cheese mix to a large sheet of cling film and mould into a log shape, using the cling film to tightly contain it (see video for guidance). Pop in the fridge until ready to serve. I recommend at least an hour anyway, just to firm up the cheese. If your mix is fairly firm you'll get away with skipping the resting time.
When ready to serve, spread the second half of your pecan mix on a chopping board. Unwrap the cheese log and coat all over with the pecan mix.
Serve on a board with crackers. Enjoy!

Cranberry, Pecan and Pistachio Cheese Log Recipe
- Cream cheese
- 1 cup extra sharp white cheddar cheese
- Dried cranberries, chopped (chop a little extra for the coating)
- 1/2 cup pistachio, chopped (chop a little extra for the coating)
- 1/2 cup pecans, chopped (chop a little extra for the coating)
- Chives, chopped (chop a little extra for the coating)
Serve with:
St. Dalfour Cranberry with Blueberry Fruit Spread

Instructions:
- Make sure your cream cheese is at room temperature, so leave it outside for 20-30 minutes before starting.
- In a bowl add: cream cheese, cheddar cheese, chopped pecans, chopped pistachio, dried cranberries, and chives and mix until well combined. You can also do this step in a food processor or a stand mixer.
- Add the cheese mixer to a plastic wrap and roll until you form a log shaped. Refrigerate for at least 1 hour.
- Remove the plastic wrap from the cheese and roll onto chopped mixture of peans, pistachio, cranberries, and chives.
- Serve with crostini topped with St. Dalfour Cranberry with Blueberry Fruit Spread and enjoy!

2 cup shredded cheddar cheese
1 8oz block cream cheese room temp
2 jalapenos chopped
2 Tbls chopped fresh parsley
1 2.5 oz of bacon pieces
1 Tbls garlic
1 tsp lemon juice
a dash of Worcestershire Sauce
1/3 cup of toasted pecans

Easy Breezy Pineapple Cream Cheese Ball
In my attempt to come up with a Holiday recipe in the form of a snack a pineapple cheese ball came to mind. So, I went out, bought the supplies, made it, and the outcome was simply superb. Made with a combination of Philadelphia cream cheese, pineapple, red bell peppers, onions, Worcestershire sauce, garlic powder, and salt, the outcome is simply to die for. Roll this in some crushed pecans or walnuts, place some crackers around the side, and your friends and family will simply love it. As a matter of fact, it got to the point where I make this up every Christmas or special occasion.
As always, you can alter the ingredients according to your liking. For example, a few drops of tabasco sauce, just for some heat, would not be out of place. In my opinion, pepper does not seem to fit the bill but it's entirely up to you. I like the fresh pecans, but you can use walnuts or even peanuts for that matter.
There are, however, a few simple suggestions to make the recipe easier to execute. In example, ensure that the cream cheese is it room temperature. That way, the dish is much easier to put together. Also make sure that the pineapple is well drained. I always use crushed pineapple in the can, but you could use pineapple tidbits or even whole pineapple rings and cut them up. It's simply a matter of personal preference.
