How To make Country Dumpling Dinner
4 lbs. spareribs
salt and pepper 2 tablespoons shortening
1 1 lb 11 oz can sauerkraut
1 teaspoon caraway seed
1 1/4 cups evaporated milk
1/4 cup instant potatoes
1 egg
slightly beaten
1 1/2 cups flour :
well sifted
1 tablespoon baking powder
Cut ribs into serving portions; season with salt and pepper to taste. Melt shortening in large kettle. Add ribs; cook until lightly browned on all sides. Add 1 quart water, 1 teaspoon salt and 1/4 teaspoon pepper. Bring to boil; cover. Reduce heat; simmer for 1 hour. Add sauerkraut and caraway seed. Simmer for 30 minutes longer. Mix 1/2 cup water and 1/2 cup evaporated milk in medium saucepan. Bring to a boil; stir in instant potatoes. Remove from heat; beat in egg and remaining milk. Sift flour, 1 teaspoon salt and baking powder together. Add to potato mixture, stirring to blend well. Drop dumplings by tablespoons onto boiling sauerkraut. Cook over moderate heat for 5 minutes. Cover; cook for 10 minutes longer. Serve

Ingredients
For the Veggies & Mandu
handful beansprouts or 1/2 of onion sliced
2 cups napa cabbage or regular cabbage, cut into bite sizes
1 zucchini or squash, cut into half-moon slices
3 Mexican green onions or 1 bundle of regular green onions, cut into half in lengthwise then 2-inch long pieces
1/2 pack of enoki mushrooms or handful of any of your favorite mushrooms
1 soft or medium soft tofu, sliced into 1/2-inch thick
handful crown daisy, or any other green leafy veggie
1 lb fresh or frozen dumplings of your choice (I love Bibigo brand for this recipe!)
For the Sauce & Stock
5 to 7 cloves garlic, chopped
3 to 4 tbsp gochugaru, Korean red pepper flakes (If you don't’ want spicy, omit it)
2 tbsp fish sauce
2 tbsp korean soup soy sauce
1 tbsp maesilaek, Korean preserved green plum extract
4 cups chicken stock

1Kg Lamb
2 Ladle Spoon Oil
2 Onions

1 Mug Peas
8 Small New Potatoes

8-10 Baby Onions
3 Green Chillies Whole

2 and a half inch Ginger Chopped
Half Bunch Fresh Green Coriander
Dry Garam Masala: 8 Broken dry Red Chillies
6-8 Black Cardamom
5-6 Bay Leafs
1Tsp Peppercorn
6/7 Cinnamon Sticks
1Tsp Cloves
Dumpling Dough:
1 Cup Cake Flour (Madia)
2 Very Finely Chopped Green Chillies
1 Fist Full Chopped Green Coriander

Beef and Dumpling Soup Traditional Family Recipe
This lovely beef and dumpling soup recipe is very similiar to a Scandinavian traditional family recipe. You can use celeriac or turnip in this soup, I used turnip but will try it with celeriac next time.

Its such a hearty soup for the Winter months and the style and ingredients are very similiar to Scottish soups. I have cooked this up in a similiar way to a traditional Scottish broth and included the dumplings. Its lovely and one of our faves.
If you want to make extra dumplings and if you are feeding kids trust me you will...cook them up in a seperate pan of stock as this soup can only hold 12 dumplings as they inflate while they cook. Delicious! Any questions drop me a comment below. :-)
