Kerala Chicken Curry Ingredients:
- coconut oil
- ½ tsp of mustard seeds
- handful of curry leaves
- 4 slit chillies
- inch of ginger roughly chopped
- 4 cloves of garlic
- 3 medium-size onions thinly sliced
- 1 tsp salt
- half tsp of turmeric
- 1 ½ tsp of red chilli powder
- 6 tsp of coriander powder
- water
- chicken pieces
- ½ cup of coconut milk
Method:
- Heat a thick bottom pan and add oil to it
- In the pan add coconut oil, mustard seeds, curry leaves, chillies, ginger, garlic, onions and salt and let the mixture cook
- Add turmeric, red chilli powder, coriander powder and give it a good mix.
- Continue stirring and add some water to bind the spices together.
- Add the chicken pieces to the mixture and mix it properly and keep stirring on high flame for two minutes.
- Add coconut milk and let it rest for 4-5 minutes on low flame.
- Keep the gas on high flame and keep stirring
- Chicken Curry is ready to be served.

Ingredients -
1 Tbsp (20ml) - Sunflower Oil
2 1/2 tsp (5.5g) - Whole Cumin Seeds
2 1/2 tsp (8g) - Yellow Mustard Seeds
2 tsp (4g) - Ground Turmeric
1kg (2.2lbs) - Chicken Thigh
1 1/2 Tbsp (35g) - Dijon Mustard
15 - Fresh or Frozen Curry Leaves
1 1/2 Cups (375ml) - Chicken Stock
1 Can (400ml - 14.1oz) - Coconut Cream
1/2 - Large Cauliflower, Sliced Into Large Pieces
Juice of 1/2 Lime
Sea Salt Flakes To Taste
Kaffir Lime Rice -
1 Cup (200g) - Basmati Rice, Washed
2 Cups (500ml) - Cold Water
3 - Fresh or Frozen Kaffir Lime Leaves
Small Pinch of Sea Salt Flakes
Notes -
To store, the curry can be placed in the fridge for up to 4 days and in the freezer for up to 4 months, both stored in an airtight container. This curry actually tastes better the next day as it's given time for the flavours to develop.
To reheat, place the curry in a pan or pot over medium heat and gently heat until hot, ensuring the chicken is hot in the centre. You can also add a splash of fresh coconut cream to refresh the flavour. Alternatively, it can be placed into the microwave and heated in bursts, mixing between each one.

South Indian Style - Chicken Curry with Coconut Milk - Recipe

Few Curry Leaves
Coconut Milk - 750 ml
Few Coriander leaves
Method:
1. Marinate the chicken pieces with turmeric powder, chili powder and salt. Let it sit 30 minutes.
2. In a pressure cooker (Buy ) add little water & the marinated chicken pieces. Pressure cook for 2 whistles
3. In a kadai (Buy ) heat oil. Add garam masala powder, shallots, onion and green chili. Saute till brown.
4. Add ginger garlic paste, tomatoes & salt. Mix well
5. Add the cooked chicken pieces with water. Add few curry leaves. Close (Buy ) & cook for 5 minutes
6. Now add coconut milk & mix. Once it starts to boil, close & cook for 10 minutes
7. Finally add curry leaves & coriander leaves. Turn off the stove.
Serve with Rice, Dosas, Chapati, Idiappam, Appam etc

Green Chilli - 3 Nos
Water - 2 Cup
Pepper - 1 Tsp
Ground Garam Masala
Thick Coconut Milk - 2 Cups
To Make Tempering
Coconut Oil - 1 Tbsp
Mustard Seeds
Shallot - 10 Nos
Coconut Slices

Method
For the Garam Masala Powder:
1. Add fennel seeds, peppercorns, cloves, cardamom, star anise, cinnamon to a pan and roast them for 2 mins on a medium low flame.
2. Once they all turn into a nice golden brown colour, turn off the stove, cool the ingredients completely and then grind them into a fine powder in a mixer jar.
For the Nadan Chicken Curry:
1. Take coconut oil in a wide pan.
2. Add the whole spices and saute, then add the onions and saute until they are golden brown in colour.
3. Add curry leaves and mix well. Add ginger garlic paste and mix again. Saute for 2 mins.
4. Then add turmeric powder, red chili powder, coriander powder, salt and mix.
5. Add tomatoes and mix. After a couple of mins, add the cleaned chicken pieces and green chilies.
6. Mix it all well and add a cup of water. Cover the pan with a lid. Cook for 15 mins on a medium low flame.
7. Now add pepper powder and ground garam masala powder. Mix well.
8. Add thick coconut milk and mix. Add water and mix again.
9. Check for seasoning and add salt if required.
10. Simmer for 5 mins on low flame.
11. After 5 mins, turn off the stove and keep the curry aside.
For the tempering and Curry:
1. Take coconut oil in a pan and add mustard seeds and shallots.
2. Saute for a few seconds and add a few coconut slices.
3. Add curry leaves and saute.
4. Transfer the tempering to the curry and mix well.
5. Nadan Chicken Curry is ready to be served!
