How To make Chorizo and Cheese Bread
1/2 lb Homemade chorizo
46 Green onions
chopped
1 tb Tomato paste
1 Tomato :
seeded and diced
1 ts Dried Mexican oregano
2 Chipotle chiles pickled
Chopped Coarse salt Pepper :
freshly ground 1 sm Loaf of French bread
1/2 lb Grated Cotija and Manchego
Cheese In a dry heavy skillet, fry the chorizo until browned. Drain off any fat and add the tomato paste and fry with chorizo briefly. Add the green onions, oregano, tomato, chile, and salt and pepper. Cook 2 to 3 minutes longer. Spread the chorizo mixture on a split loaf of French bread. Sprinkle generously with Cotija and Manchego cheeses. Chorizo Grilled Cheese
Made a chorizo grilled cheese!
Ingredients:
- 4 oz chorizo
- 2 slices of sourdough
- 2 tbsp butter
- 4 slices of Colby jack
- Lime juice
- Cilantro
- Paprika
- Cayenne
Recipe:
1. Cook the chorizo for 5 min in a pan. Squeeze some lime juice. Sprinkle paprika, cayenne, & cilantro. Set to the side.
2. Assemble the sandwich: bread, 2 slices of cheese, chorizo, 2 slices of cheese, bread.
3. Melt 2 tbsp butter. Add the sandwich & cover. Flip & toast until the cheese is melted & bread is golden brown.

CRISPY CHEESE AND CHORIZO SANDWICH!
AMAZING Breakfast Sandwich! Crispy cheese crust with spicy chorizo sausage and potatoes finished with a simple, but tasty yogurt sauce.

Ingredients:
5 pcs. thick cut pullman bread, center portion removed but reserved
3 large eggs, whipped
8 oz. chorizo sausage, ground. I used 3 links in my recipe
1 medium bell pepper(green, red, yellow), diced
1 white or yellow onion, diced
1 large potato, peeled and diced
3 tbsp. cilantro, chopped
Olive oil, as needed
8 oz. Quesadilla or mozzarella cheese
5 slices pepperjack cheese or sliced cheese of your choice
1/3 cup yogurt or sour cream
¼ cup mayonnaise
2-3 tbsp. hot sauce
Salt and pepper, to taste
1 squeeze bottle(optional)
Method:
1. Cut out center of bread and be sure to leave a border to hold filling.
2. Boil potato in salted boiling water until tender.
3. Sauté onion and pepper in a medium hot pan. Once translucent, add in chorizo sausage. Season with S&P.
4. Add potatoes to chorizo and pepper mixture
5. For sauce, mix yogurt, mayonnaise and hot sauce. Season with S&P. If desired, transfer sauce to squeeze bottle.
6. In medium hot pan, sprinkle quesadilla or mozzarella cheese. Once slightly melted, top with bread and fill in center with potato and chorizo mixture.
7. Slowly add in eggs until filled to top of bread.
8. Top with a slice of pepperjack cheese and center piece of bread.
9. Cover for 3-4 mins or until cheese is nicely browned/caramelized.
10. Flip and cook for additional 3-4 mins or until eggs are set.
11. Remove from pan and cut in desired portion size.
12. Top with sauce and chopped cilantro.
13. ENJOY!!

Cheesy Chorizo Bread
Prep Time: 15 min.
Baking time: 20 minutes
Serves: 8-10 portions

Ingredients:
1 14oz. package of Supremo® Brand Pork or Beef Chorizo from V&V SUPREMO®
1 crusty loaf, sourdough or Vienna
4 cups Shredded Chihuahua® Brand Quesadilla Cheese or Oaxaca Cheese from V&V SUPREMO®, reserve 1 cup for topping
½ cup Grated Sierra® Brand Cotija Cheese from V&V SUPREMO®
Preparation:
1. Preheat the oven to 350°F. Line baking sheet with aluminum foil.
2. Preheat a medium skillet over medium heat for 1 minute. Remove the plastic casing from the Pork or Beef Chorizo and cook for 10-12 minutes. Brake up while it’s cooking. Set aside.
3. Place bread on a cutting surface and slice diagonally - do not cut all the way through the bread. Slice again diagonally in the opposite direction, in a crisscross manner.
4. Lift the bread with one hand to reveal the open sections in the bread. Spoon about half of the chorizo in between all the open sections of the bread, then do the same with the Chihuahua® cheese. Repeat again to make a total of 2 layers.
5. Combine the reserved cup of Chihuahua® cheese with ½ cup of Sierra® Cotija cheese and top over the crust.
6. Place the bread onto the prepared baking sheet and bake for 20 minutes, or until the cheese has melted. Serve and enjoy!
