8 Servings
8 Chicken breasts, halved,
-boned and skinned 1 ts Garlic powder
1 ts Paprika
Salt and freshly ground -black pepper to taste 3 tb Safflower oil
2 c Beef broth
2 ts Cornstarch
1/3 c Dry red wine
2 tb Oyster sauce
4 Green onions, including
-tops, chopped 1/4 c Pistachio nuts, shelled
Chinese rice noodles Pistachio nuts (optional) Season chicken breasts with garlic powder, paprika, salt and pepper. Saute chicken in oil over medium-high heat. In saucepan, combine beef broth, cornstarch, wine and oyster sauce. Heat to boiling and simmer for 10 minutes. Add green onions and 1/4 cup pistachios. Prepare rice noodles according to package directions. Place noodles on heated serving dish, top with chicken breasts and pour sauce over all. Garnish with additional pistachios. Pistachio Chicken | Chinese Style Stir Fry
Ingredients:
500g of Chicken breast
2 scallion
Sliced of Garlic
Prickly ash
Dried hot pepper
Pistachio
Marinated sauce:
1/4 tsp of Salt
1/8 tsp of White pepper
1/2 tbsp of Corn starch
1 tbsp of Cooking wine
1 tbsp of Dark soy sauce
Sauce:
1/4 tsp of sugar
1/8 tsp of White pepper
1 tsp of chicken stock powder
1 tbsp of Black vinegar
1 tsp of soy sauce
1 tbsp of water
1. Cutting chicken breast into 3*3cm pieces, mix with marinate sauce and set for 10 minutes.
2. Add in about 3tbsp of oil, cook the marinated chicken until 80% cooked.
3. Remove the chicken from the pan, use the remaining oil in the pan to fry the garlic and white part of scallion for 2 minutes.
4. Add in prickly ash and dried hot pepper stir fry for another 1 minute.
5. Add the chicken breast back to the pan with sauce, cooking for 2 minutes.
6. Finally, add green part of scallion and pistachio, mix well.

Pistachio Crusted Chicken Dinner - Cucina Di Salvatore
Pistachio Crusted Chicken Instructions
Hi everyone, welcome to Cucina Di Salvatore, home of eclectic food flavors and culinary innovation.
This holiday meal is invented by yours truly, Pistachio crusted chicken drumstick with a side arugula salad. The side salad is topped with pomegranate seeds giving the appearance of a holly berry and feta cheese acting as snow.
First set the oven to 400 degrees.
Coat your chicken with 6 tablespoons of honey mustard.
Dip your honey mustard chicken into your pistachio mix. The crust should consist of 4 tbsp crushed pistachios, 4 tbsp Italian bread crumbs and 1 tbsp garlic salt.
Place the chicken in a baking pan and rack to avoid my chicken getting soggy on the bottom side. Bake for 25 - 30mins on 400 degrees.
15 minutes into cooking coat your crust with a little olive oil and place a sheet of foil over it. This will give the crust a nice golden shine to it, while using the foil avoid the crust layer from burning. Let it cook for another 15 - 20 minutes.
