How To make Chilled Couscous Vegetable Salad
Ingredients

couscous

vegetable stock

thyme, fresh chopped, or 1/2 ts dried

wine vinegar

baby peas, frozen, thawed

corn kernels, frozen, thawed

each
tomatoes, peeled, seeded, chopped
2
each
scallions, sliced thin
1
tablespoon
basil, fresh, chopped, or 1/2 ts dried

romaine leaves, washed, dried
Directions:
Place couscous in large bowl. Pour 1 cup boiling water over couscous and let stand. In saucepan, bring vegetable stock to boil, add thyme and vinegar. Boil to reduce to 3/4 cups. Add peas and corn to liquid and turn off heat. Toss tomatoes, scallions, and basil into couscous. Add liquid to couscous and mix well.
Cover and refrigerate 2 hours before serving. To serve, top a romaine leaf with couscous mixture. Makes 6 servings

Ingredients
Couscous 200ml
Water 200ml
Salt 1tsp
Black pepper 1/2tsp
Roasted cumin and coriander 1tsp
Olive oil 1 tbsp
Cucumber, Parsley, Bell pepper 2tbsp each
Red onion 1 small
Tomato 1 small
Salad dressing
Garlic clove 1 finely chopped
Tomato paste 1/2tbsp
Fresh lemon juice 1tbsp
Olive oil 1tbsp
Preparation
-Put 200 ml of couscous into a large bowl. Add 1 tsp of salt, 1/2 tsp of black pepper, 1 tsp of roasted ground cumin & coriander and 1 tbsp of olive oil, mix well.
- Now add 200 ml of boiling water in couscous mix well and cling film it until its fluffy and all the water is absorbed.
- Meanwhile, prepare the salad dressing.
- Chop one clove of garlic, add 1/2 tbsp of tomato paste, 1 tbsp of fresh lemon juice and 1 tbsp of olive oil (I prefer extra virgin olive oil) mix well and the dressing is ready.
- After 15 mins take the cling film of the couscous and rub the couscous between your hands to separate the grains.
- Add the salad dressing in the couscous and repeat the process.
- Now add 2 tbsp of diced cucumber, handful of fresh parsley, 1 small onion, 1 tomato and 2 tbsp of bell pepper (optional) and mix well.
- Then sprinkle over some pomegranate seeds and the salad is ready to eat.
Tip: you can add some raisins to give it a sweet kick.
