How To make Chicken Mole
3 tb Oil
2 1/2 lb Chicken pieces
2 tb Minced garlic
3/4 c Diced onion
2 c Chicken broth
1 c Peeled seeded tomatoes
- (canned) 2 tb Epazote or oregano
1/4 lb Assorted Mexican chiles
-such as pasilla, guajillo - and mulata - stems and seeds removed 1/2 ts Ground cloves
1 tb Cocoa powder
1/2 ts Cinnamon
1/4 c Shelled almonds
HEAT THE OIL in a large, lidded skillet and brown the chicken pieces on all sides. Add all other ingredients, bring to a boil, cover, reduce heat to low and simmer until chicken is done, about 30 minutes. Remove the chicken to a platter and set aside. Place the cooking liquid in a blender or food processor and blend until as smooth as possible. Return the sauce to the skillet, replace the chicken and cook everything together another 10 minutes. Serve with tortillas, rice, beans and tamales.

EASY CHICKEN MOLE RECIPE | DONA MARIA MOLE
Ingredients needed
11 chicken thighs
2 tbsp chicken flavor bouillon
1 jar Dona Maria mole sauce (8.25oz)
1 tbsp peanut butter
2 cups of chicken broth from the chicken broth
Boil chicken thighs and add chicken bouillon
In a blender add mole sauce, 1 tbsp peanut butter 1 cup chicken broth (from boiling the chicken)
And if need to add additional 1/2 cup till mole is smooth but not watery
Add mole to a pot low heat and add cooked chicken thighs. Mix well and Add additional (1cup of broth to mole)
Cook 20 min low heat

INGREDIENTS FOR MOLÉ
2 lbs boneless chicken breast
1 tsp salt
1 tsp granulated garlic powder
1 tsp granulated onion powder
1/4 tsp to 1/2 tsp smoked paprika
1/2 tsp cracked black pepper
19 oz container ready-made molé sauce
2 Tbsp peanut butter
1 Tbsp chipotle peppers in Adobo sauce
1.5 oz Mexican chocolate
4.5 qt Crockpot
Set to High and cook 4 to 4 1/2 hrs
INGREDIENTS FOR RICE
1 1/2 Tbsp cooking oil
1 1/2 cups long grain rice
1 1/2 Tbsp granulated chicken bouillon
1 Tbsp dehydrated minced onion
1/2 tsp granulated garlic powder
2 tsp dried parsley
3 cups water

Chicken Mole
Ingredients:
-8.25 jar of Dona Maria mole
-8 chicken pieces I prefer thighs and drumsticks
-1 medium onion chopped in half
-1 tablespoon of Lawry's garlic salt seasoning
- 1 tsp of ground black pepper
-1 tablespoon of granulated chicken bouillon (you may use carton or canned bullion but that will count for both the liquid and add no extra boullion powder needed)
-1 tbsp of chili powder or to your preference if you prefer it even more spicy. Add a little at a time and stir until you get desired spiciness.
*Optional one heaping tablespoon of creamy peanut butter.
Instructions:
-In a large pot(if you don’t have a dutch oven) have in your 8 cups of water and your chicken pieces . Add your garlic and onion and boil about 15 minutes.
-Remove a piece of chicken and cut into it to see that it is thoroughly cooked if not add back to pot and cook about 10 minutes or until temperature with poultry thermometer reads 165° F
-In a blender place the garlic and onion that you have fished out of the broth with a slotted spoon into blender add your Dona Maria mole paste, chili powder, peanut butter and about 1 cup of the broth , blend until smooth add one more cup of broth and blend until chili is fairly thin enough to pour back into pot. As chicken continues to cook it will thicken.
*When using a blender with hot liquids do not leave the little center cap on blender use a hand towel or tea towel to cover while blending as hot liquids will make it splatter.
* You may skim foam off mole with a slotted spoon if you prefer, it is basically just fat from chicken.
