How To make Cate's Guacamole Tomato Salad
RECIPE BY CATE VANICEK:
6 md Tomatoes
2 Ripe avacados
2 ts Lemon juice
2 ts Salt
1 sm Onion, chopped finely
1 cn Green California chiles,
- chopped 1 Bottled wax pepper, chopped
- very fine 1/2 ts Wax pepper juice
4 Bacon slices, crisp-cooked
- and crumbled Bed or lettuce for tomatoes Fry 4 slices of bacon until crips, drain on paper towel, then crumble bacon. Remove tomato navel, core tomatoes, scoop out inside centers and chop finely. Sprinkle the insides of the tomatoes with 1/2 teaspoon of the salt. Turn the tomatoes upside down on paper towels to drain, then place in refrigerator and chill. Add onion, diced green chilies, lemon juice, and the remaining salt to the chopped tomato. Mix and chill. When it is time to serve the salad, mash the avacado mixture and stir into the tomato mixture. Do not allow to stand, or the avacaos will darken. Place the tomatoes on the bed of lettuce. Fill tomatoes with guacamole, and top them with the crumbled bacon. Serve immediately.

INGREDIENTS:
8 bacon rashers
2 gem lettuces
Rocket
Cherry tomatoes
1 small can of sweet corn
1 avocado, chopped
Feta cheese, crumbled
6 tbsp extra virgin olive oil
2 tbsp Dijon mustard
STEP 1: FRY THE BACON
Fry the bacon in a pan until it's nice and crispy. Once it's ready remove it from the pan and allow it to cool.
STEP 2: CHOP THE VEGETABLES
Slice up the lettuce and place it in a bowl. Add some rocket to the bowl along with the chopped tomatoes and the sweet corn, then give it a good mix. Next add the the chopped avocado and the feta cheese.
STEP 3: MAKE THE DRESSING
Add 2 tbsp of red wine vinegar to a jam jar along with 6 tbsp of extra virgin olive oil and 2 tbsp of Dijon mustard. Season with salt and pepper and a squeeze of honey, put the lid on, and shake until the dressing has emulsified.
STEP 4: ADD THE BACON
Chop the cooled bacon and add it to the salad. Pour over the dressing and give it a good toss.

Ingredients:
Mozzarella
Basil leaves
Tomatoes (or one REALLY big one)
Olive Oil
Balsamic Glaze
Everything but the Bagel Seasoning
Avocado
Directions:
1. Wash produce.
2. Cut produce.
3. Lay out on plate.
4. Glaze plate with glaze and 2 spoonfuls of olive oil
5. Sprinkle Bagel Seasoning and Enjoy!
