How To make Brown Sugar Icebox Cookies
1 stick unsalted butter
softened
1/2 cup light brown sugar :
packed
1/4 cup granulated sugar
1 large egg
1 1/2 teaspoons vanilla
1 2/3 cups flour
1/2 teaspoon baking soda
1/8 teaspoon salt
In a bowl, beat the butter with an electric mixer until fluffy. Add the brown sugar and granulated sugar; beat until well blended. Beat in the egg and vanilla until thickened. Beat in 2/3 cup of the flour along with the baking soda and salt. Stir in remaining 1 cup flour; the dough will be soft.
Divide the dough in half. Wrap each half in wax or parchment paper or plastic wrap. Shape it into a 6" log. Refrigerate until firm. (The logs can be stored in a plastic bag and refrigerated for up to 1 week or frozen for up to 2 months.)
Preheat oven to 350. Using a thin knife, slice each log 1/8" to 1/4" thick. Arrange the cookies 1" apart on a buttered cookie sheet. Bake for 10 to 15 minutes or until lighly golden.
VARIATIONS
Ginger Almond: Add 1/2 cup finely chopped crystallized ginger. Roll each log in 1/3 cup of finely chopped blanched almonds.
Lemon Poppyseed: Add 3 tablespoons of poppyseeds and 1 tablespoon of grated lemon zest. Roll each log in 1 tablespoon of poppyseeds.
Spice: Add 1 teaspoon freshly ground nutmeg, 1 teaspoon cinnamon and 1/4 teaspoon ground cloves. If desired, roll each log in 1/3 cup of finely chopped walnuts.
Coffee Edged: Roll each log in 1 1/2 tablespoons very finely group French roast coffee.
Pecan: Add 1 cup finely chopped toasted pecans. Roll each log in 1/3 cup finely chopped toasted pecans.

Cookie Recipe ( Crispy melt away cookie BASE dough) :
- 750 gr soft room temp Butter ( 6 2/3 sticks )
- 300 gr Powdered Sugar ( 2 1/2 cups)
- 3 room temp X Large Egg Whites
- 900 gr All purpose Flour ( 6 cups + 1/2 cup)
- 3 tsp Vanilla
- 1/4 tsp Salt

Divide the dough into 5 equal portions and with each dough make 5 different cookies:
■ Vanilla Butter Cookies:
Leave the first dough as is.
You'll need a piping bag and a tip of your choice.
■ Linzer Cookies:
to the second cookie dough, add:
- 60 gr Almond Flour (1/2 cup)
- 40 gr All Purpose Flour ( 4 tbsp)
- 1/2 tsp Almond Extract
- Jam of your choice
■ Gingerbread *Style* Cookies:
to the third cookie dough, add:
- 2 3/4 tsp Ginger
- 3 tsp Cinnamon
- 2 or 3 tsp Cocoa Powder
- 40 gr Flour ( 4 tbsp)
For stronger gingerbread flavor add more ginger.
■ Sugar Cookies:
to the fourth cookie dough, add:
- 50 gr All Purpose Flour ( 5 tbsp)
- 1/2 tsp Vanilla
■ Chocolate Sugar Cookies:
to the fifth cookie dough, add:
- 60 gr Sweetened Cocoa Powder ( 7 1/2 tbsp) ( Bloom the cocoa with 5 tbsp hot Milk) If you're using UNsweetened cocoa powder you may have to add 1 tbsp more icing sugar.
- 20 gr All Purpose Flour ( 2 tbsp)
- Melted good quality chocolate to fill the cookies

Here it is! My Icebox Cookie recipe!

Ingredients:
2 cups all purpose flour
1 tsp baking soda
1/4 tsp salt
3/4 cup butter
3/4 cup powdered sugar
2/3 cup light brown sugar
1 large egg
1 1/2 tsp vanilla extract
2 cups chocolate chips
Bake at 325F for 15-17 min and ENJOY!!!

Today, I am making delightful Christmas tree cookies all from scratch to celebrate this Christmas season! The type of cookies is called icebox cookies, which you can also enjoy by chilling in a fridge. I hope you’ll enjoy this video and try it at your home if you get a chance!

[INGREDIENTS]
• Unsalted butter: 226g (8oz, 2 US sticks)
• Powdered sugar: 180g (6.3oz)
• Salt: 1/4 tsp
• Whole egg: 1
• Egg yolk: 1 (Save the egg white for egg wash)
• Cake flour: 350g (12.3oz)
• Almond flour: 70g (2.5oz)
• Colorings: Add as you like! (A link is below)
• Sprinkles: As your choice!
Egg wash:
• Egg white: 1
• Water: 30g (1oz)
Bake at 340F | 170C for about 10 mins
and turn the temperature down to 330F/165C and bake for another 10 mins or until the edge is slightly toasted.
*Adjust the time and temperature depending on the oven and the size of your cookies. (Today, it was about 2 inch/5cm)

Easy No Spread Sugar Cookies
These no-spread sugar cookies are great for cutouts, perfectly sweet, and totally delicious.
