Buckwheat Kasha with Facon
If you're looking for something different to serve as a side dish try kasha. It's woodsy nutty flavor is perfect complement to all your fall dishes. And the addition of wild mushrooms and beef fry add the just the right amount of savory flavor to this hearty dish.
Buckwheat Kasha w/Mushrooms & Facon
You will need:
- 2 pkg Shiitake Mushrooms (sliced)
- 8 strips of Facon ( sliced)
- 1 medium Onion ( diced)
- 1 1/2 cups Buckwheat
- 2 3/4 Chicken Stock (bought to a boil)
- Salt to taste
Directions:
1. In a medium skillet cook the facon over medium heat until they start to crisp. Remove with a slotted spoon to drain on a dry paper towel
2. Add the onions to the facon fat and sauté until golden brown.
3. Add the mushrooms to the onions and sauté for 2 minutes.
4. Stir in the buckwheat making sure all the kernels get coated with the rendered facon fat.
5. Add the boiling chicken stock. Then lower the heat and cook for another 30 minutes.
6. Remove from heat and stir in the facon. Reserving some for garnish
7. Taste to check if more salt is needed and add salt accordingly.

Buckwheat Risotto
Vegan Recipe from Prüv Wellness
100g buckwheat groats
200g mixed mushrooms, chopped
1 large onion, diced
2 stalks celery, diced
1 leek, chopped
4 large kale leaves, chopped into raw ribbons
1 litre vegetable stock (or mushroom soaking liquid/broth, or chicken stock)
salt and pepper to taste
2 tablespoons olive oil
1. Put the buckwheat groats into a dry pan and roast over a gentle heat, until turning brown and smelling toasty.
2. In a large frying pan, saute the onion, leek, celery, and garlic in olive oil until translucent. Add the toasted groats and stir so they can absorb the flavours. Pour over the stock and simmer until buckwheat is tender.
3. In a separate pan, saute the mushrooms in olive oil until soft and juicy. Add to the buckwheat and other vegetables and stir.
4. At the last minute, stir in the finely chopped raw kale and allow to wilt in the residual heat of the risotto. Serve.

Buckwheat Cereal
If you need a very fast breakfast that's warm, filling and a whole gluten-free grain, try this buckwheat groats breakfast.
Ingredients:
1/2 cup water
1/4 cup organic whole buckwheat groats
pinch of salt
fresh organic almonds, or other nut such as pecans or walnuts
organic raisins
Method:
Add water to a pot and place on high heat
Add the buckwheat right away and a pinch of salt
Stir to mix
Bring the ingredients to a light boil
Reduce to a simmer and cover for 3-5 minutes or until all water has evaporated.
Place the buckwheat cereal in a bowl, add the toppings of your choosing plus any dairy-free milk.
Serves 1 adult or 2 small children.

►200g chestnut mushrooms
►50 ml vegetable oil
►parsley, paprika, salt, pepper
►1 leek

1. Prepare the veggies
2. Fry the veggies in a deep frying pan for 2- 3 min
3. Add the mushrooms and fry them for 7- 8 min
4. Add the spices
