How To make Baked Sweet Red & Yellow Pepper Wedges
2 md Size sweet red peppers
2 md Size sweet yellow pepper
1 md Size onion fine chopped
1 cn (28-oz) crushed tomatoes
-well drained 1/4 c Chopped fresh parsley
1/4 c + 2 tablespoon olive oil
3 tb Pine nuts
4 Clove garlic fine chopped
1 ts Salt
1/4 ts Pepper
1/4 c Fresh bread crumbs
Preheat oven to 375 degrees. Lightly oil 13 x 9 inch baking pan. Trim tops off peppers; discard stems and finely chop tops. CUt each pepper lengthwise into sixths. Place wedges, cut side up, in oiled pan; set aside. Combine pepper tops, onion, tomatoes, parsley, the 1/ 4 cup olive oil, pine nuts, garlic, salt and pepper in medium size bowl. Spoon equal amounts of mixture into each of the pepper wedges. Bake wedges in preheated oven at 375 degrees for 25-30 minutes or until just tender. Sprinkle bread crumbs and remaining 2 tablespoon oil over all. Bake 10 minutes longer.

These roasted sweet potatoes will hands down be your best way of roasted sweet potatoes. The sweet potatoes are deliciously soft inside and caramelized outside, perfect roasted sweet potatoes side dish for the holidays.
INGREDIENTS
3 large sweet potatoes ( i recommend using fresh newly bought sweet potatoes, they taste the best)
3 Tbs olive oil
1 1/2 tsp garlic powder
1 1/2 tsp onion powder
1 1/2 tsp paprika
1 Tbs brown sugar
1 tsp ground cinnamon
salt and pepper to your taste taste ( i used about 1 and 1/2 tsp salt and 1/4 tsp black pepper)
BRIEF INSTRUCTION
1. Cut sweet potatoes into cubes
2. Add the rest of the ingredients to sweet potatoes and mix very well
3. Place sweet potatoes into a greased baking pan, be sure to space them out well.
4. Bake at 425 F for 30 to 35 minutes

Here is what you'll need!
GARLIC PARMESAN POTATO WEDGES
Servings: 2
INGREDIENTS
3-4 potatoes
3 eggs
1 cup parmesan cheese, grated
¼ cup parsley, chopped
1 tablespoon oregano
1 teaspoon paprika
1 teaspoon salt
1 teaspoon pepper
½ teaspoon red pepper flakes
PREPARATION
Preheat oven to 375ºF/190ºC.
Slice potato in half then take the half and quarter it.
Whisk 3 eggs in a small bowl.
Combine remaining ingredients in a medium bowl.
Coat each wedge in egg wash, then coat in dry mix, until entirely covered.
Place on a greased baking sheet and bake for 30 minutes.
Allow to cool for 5 minutes.
