4 Vidalia onions 1 ts Olive oil 1/2 c TVP flakes or granules 1/2 c Hot water 1/2 ts Marjoram 1/2 ts Cumin 1/2 ts Salt 1 pn Cayenne pepper 1/2 c Fine breadcrumbs 1/2 c Vegetable stock 1/2 c Grape juice or white wine Peel onion then slice the tops off & hollow out. Leave about a 1/2-inch shell. Reserve the onion centres. Place shells in a steamer basket & steam for 6 minutes after the water has come to a boil. Measure 1/2 cup of the reserved onion & finely chop. In a small skillet heat oil & saute onion till it is soft. Stir together TVP flakes & water. Add seasonings & mix well. Combine with the cooked onions & stir in the breadcrumbs. Place the hollowed out onion shells in a baking dish. Spoon filling into the shells. Any remaining filling that won't fit into the shells can be placed around the shells. Leave uncovered bake at 375F for 30 to 35 minutes. Let stand for 5 minutes before serving. VT, February 1992

6 Large Sweet Vidalia® Onions 12 Strips of Bacon 2 Tablespoons of Butter
Preheat the oven to 350°F.
Peel & wash onions. With point of a small, sharp knife, cut 1-inch core from the top of onions.
Wrap 2 slices of bacon around onions, secure it with toothpicks, and put 1 teaspoon butter in cores.
Place onions on a square of aluminum foil and bring the edges loosely together at the top.
Put the foil-wrapped onions in a large pan and bake for 1 hour and 20 minutes, or until the onions are tender.
Cool the onions for a few minutes before serving.

Stuffed Vidalia Onions Prep time: 15 min Cook time: 45 min Servings: 4
Ingredients: 4 medium-sized Vidalia onions 1-5oz bag of croutons (any flavor) 1 cup stock (any) - Warmed 1-16oz jar of Live Well zucchini and lemon sauce 1 cup Shredded low-moisture mozzarella 2 tbsp Salted butter 1 tbsp olive oil 1/8 tsp Salt 1/8 tsp pepper 5 sprigs of thyme
Instructions: 1. Cut the onion approx. 1 cm on the stem side 2. Peel the onion 3. Level the root tip to flatten it out to ensure the onion stands up like a bowl 4. Using a spoon or a melon baller, scoop the insides of the onion out until only the first 2 layers remain. 5. Rub the onion with olive oil, salt, and pepper on the inside and out. 6. On a separate container, rehydrate the croutons with 1/2 cup stock and 1 cup Live Well sauce then let cool. 7. Mix in the mozzarella with the cooled rehydrated croutons 8. Combine the remaining stock, Live Well sauce, and 2 tbsp butter to make a loose sauce 9. Arrange the onions in a baking dish and fill it with the crouton mixture 10. Pour the sauce into the baking dish with the herbs then seal with foil 11. Bake at 375F for 35 min, covered. 12. Let rest for 10 min before serving
