How To make Friendship Cake
1 Pint Friendship Cake Starter
16 Ounces Lite peaches
sliced
20 Ounces Pineapple tidbits
3 Maraschino cherries; 6 oz
drained 7 1/2 Cups Sugar
2 Packages Golden Butter Cake Mixes
2 Packages Instant Vanilla Pudding Mix
8 Eggs
1 1/3 c Oil
2 c Raisins :
optional
2 c Walnuts optional
2 c Pecans :
optional
2 c Coconut -- optional
Day 1. Pour starter into glass gallon jar. Add can of sliced peaches with the juice; cut each slice into 4 pieces. Add 2 1/2 cups sugar. Stir. Cover jar loosely and keep at room temperature. Stir every day for 10 days. All the sugar may not dissolve for several days. Don't cover airtight.
Day 10. Add can of pineapple tidbits with juice and 2 1/2 cups sugar. Stir. Continue as before, stirring every day for 10 more days. Your starter has changed color and your fruit will foam when stirred.
Day 20. Add 3 6-oz jars of maraschino cherries, drained. Cut each cherry in half. Add 2 1/2 cups sugar. Stir. Continue stirring daily for 10 days. These are the last ten days. The cherries will give the juice its pinkish color back.
Day 31. You will now bake your cakes. Preheat oven to 300~. Grease and flour your pans. Drain fruit into a large bowl. Pour juice into 3 pint jars. Into a large bowl put 1 box cake mix, 1 box instant vanilla pudding mix, 4 eggs, 2/3 cup oil and 1/2 the drained fruit. Mix with a spoon only until well mixed. Then stir in 1 cup each of raisins, walnuts, pecans and coconut. Pour into prepared pans. Bake until straw inserted in center comes out clean. Makes 2 tube pans or 12 one pound loaves or 4 loaves, 9 1/2x5 1/2x3-inch. Bake one tube pan at a time for approximately 60-90 minutes. Bake large loaves for 60-90 minutes or until a straw inserted in center comes out clean.
Comments. MUST put in a gallon GLASS jar. Use fruit in juices NOT syrup. The three pint jars of juice are the starters, one for you and two for your friends. Never refrigerate the starter!

1 packet yeast
1/4 C warm water
1 C milk
1 C flour
1 C sugar
Mix well with wooden spoon or spatula. Keep on counter in glass jar covered loosely or zip lock back. Stir daily and burp the ziplock bag.
Day 1 - Make starter
Days 2-5 stir
Day 6 add 1 cup each of milk, flour, and sugar
Days 7-9 stir
Day 10 add 1 cup each of milk, flour and sugar
On Day 10 take up batter in 1 cup measurements into bags, gifting and keep one back for yourself for Bread.

How to start the 30 Day Friendship Cake
Come join me in making this 30 Day Friendship Cake. Get your canned fruit and get started. We will bake the cake on New Years Eve.
DO NOT REFRIGERATE FRUIT! LET SIT ON COUNTER IN KITCHEN. MAKE SURE LID IS NOT TIGHT.
Recipe:
1 large (gallon size) glass jar with loose fitting lid
Beginning with no starter
2 1/2 cups sugar
1 large can 20-28 oz of sliced peaches
Stir and continue to stir once everyday for 10 days.
On 10th day, add 2 1/2 cups of sugar
1 large can 20 oz of pineapple and the juice ( tidbit size or crushed)
stir once daily for the next 9 days
On 20th day, add 2 1/2 cups of sugar
1 or 2 cans of maraschino cherries and juice
stir on daily for the next 9 days
On the 30 day you are ready to bake the cake:
1/3 of fruit
1 box yellow cake mix
1/2 cup to 1 cup pecans
1 cup coconut
1 small box of instant vanilla pudding

Friendship Bread is a type of bread or cake made from a sourdough starter that is often shared in a manner similar to a chain letter. The starter is a substitute for baking yeast and can be used to make many kinds of yeast-based breads, shared with friends, or frozen for future use. The sweet, cake-like Amish Cinnamon Bread is a common bread that is made from this starter; it is a simple, stirred quickbread that includes a substantial amount of sugar and vegetable oil, with a mild cinnamon flavor. It has characteristics of both pound cake and coffee cake. The flavor of the finished product can be altered by omitting cinnamon.
A common cycle is based on the addition of one cup each of sugar, flour, and milk every five days, with bread baked and extra starter shared every tenth day. The ten-day cycle produces five cups of starter, which must be either used to bake bread, given away, or used to start a new cycle. A common suggestion is to bake one loaf of bread, give away three cups of starter, and to save the remaining one for the next cycle.
It is not necessary to wait the canonical ten days before using one cup of starter: a cup of starter can be used as a yeast substitute at any point. However, using starter on earlier days will result in a smaller quantity of starter at the end of the cycle. To avoid running out of starter, it is normal to feed the starter (add milk, sugar, and flour) before removing a cup for use, and most recipes assume that starter is always fed immediately before being removed. A five-day baking cycle feeds the starter every fifth day and uses the resulting mixture on that day to bake one or two loaves of bread (one cup per loaf). The remaining starter is reserved to begin the next five-day fermentation cycle.
Despite common instructions to the contrary, the starter can be frozen for later use, and the cycle begun anew after thawing. The cycle can also be slowed to about half the normal fermentation rate by refrigerating the starter instead of allowing it to ferment at room temperature.
