How To make Watermelon Muffins
1 1/2 c Flour
2 ts Baking soda
1 ts Baking powder
1 pn Salt
1/8 ts Cinnamon
6 tb Butter; room temperature
2/3 c Sugar
2 Eggs
1/2 c Milk
1/2 c Watermelon juice
1/2 c Watermelon pulp
1/2 c Raisins
Sift flour, baking powder, baking soda, salt and cinnamon in large bowl. Cream butter and sugar; add eggs. Whip in milk, juice, pulp and raisins. Add wet mixture to dry ingredients; blend just to incorporate. Fill greased muffin cups 2/3 full. Bake 25 minutes. Transfer to wire rack; cool. Watermelon muffins: the perfect dessert for summer!
Cupcakes - makes 10-12 cupcakes
6 tbsp butter, softened2/3 cup sugar3 egg whites1/2 cup sour cream1 tsp vanilla extract1 cup + 2 tbsp all purpose flour1 & 1/2 tsp baking powder1/4 tsp saltgreen food coloring
Buttercream
2 sticks of butter, unsalted at room temperature1/2 cup vegetable shortening3-4 cups powdered sugar3/4 tsp of powdered watermelon koolaid mixsmall about of red food coloring, to give the buttercream a pinkish colormini chocolate chips
Directions:
Cupcakes
Beat the butter and sugar until fluffy. Add in the egg whites.Add in the sour cream and vanilla extract and beat again.In another bowl, combine the flour, baking powder and salt, mix with a spoon.Add the flour mixture to the wet ingredients.Add in the green food coloring.Divide the batter among the cupcake liners, filling each 1/2 full.Bake at 350º F/180ºC for 15 minutes. Let them cool.Buttercream
In a mixing bowl beat the butter and powdered sugar until smooth, about 2 minutes.Add a small amount of red food coloring, mixing with an electric mixer.How to assemble
Pipe the buttercream onto the cupcakes, add mini chocolate chips on top.

WATERMELON SALSA RECIPE
2 tablespoon fresh lime juice
1 tablespoon olive oil
3/4 teaspoon ground coriander
1/2 teaspoon chili powder
1/2 teaspoon salt
1 ear left over cooked corn, kernels cut off cob (about 1 cup)
2 medium tomatoes, cored, seeded, and cut into 1/2 inch dice (1 1/2 cups)
1/3 cup diced sweet onion
1 jalapeño pepper, halved, seeded, and finely chopped
1 1/2 cups 1/2 inch cups watermelon (8 ounces)

1 tablespoon soy sauce
1 1/2 teaspoon minced ginger
1 teaspoon agave syrup

1 pound ground turkey
1/2 teaspoon salt
1/2 tablespoon ground black pepper
1 (8 ounce) package coleslaw mix
1/2 red bell pepper, diced
2 green onions, chopped or more to taste
2 cloves garlic, minced
1 tablespoon sesame seeds
