How to make Vindalho Vindaloo Masala | Goan Indian Marinade | Kravings
Make this luscious and authentic Vindaloo or Vindalho paste made with Red Kashmiri chillies, ginger garlic, peppercorms, cumin and vinegar, perfect for chicken, pork or seafood. This is a Goan specialty with Portuguese Influence.
Here are the ingredients and steps to make this recipe!
Vindaloo Masala
Vindaloo Paste
20 Kashmiri Chillies
1 inch stick Cinnamon
6 Cloves
1 tsp Cumin seeds
10 Peppercorns
1/4 tsp Black Mustard seeds
1/2 tsp Turmeric powder
1/4 cup Ginger
1/4 cup Garlic
1/4 cup Goa (sub Red Wine Vinegar or Malt Vinegar)
Water as required
Clean and deseed the Chillies
Soak the Kashmiri Chillies in hot water fir 1 hr to overnight for 2 reasons A) I feel much better knowing that the chillies have been cleaned by immersing in hot water and B) Soaking the skins makes for a much better texture in the Vindaloo paste
First process all the dry ingredients like the Cinnamon, Cloves, Cumin seeds, Peppercorns & Mustard seeds
Add the Turmeric powder
Add the fresh Ginger & Garlic
Add the soaked chillies in batches and process
Add the Vinegar and the rest of the chillies and keep processing.
To thin out this masala and get it nice and smooth add the water that the chillies were soaked in or regular water

I have tried the vindaloo served in some British curry houses and I’m sorry to say it is mostly an amalgamation of those restaurants’ different curry sauces with lots of chillies, with no real Goan flavour. Those curries have little to do with real vindaloo… except that they are hot. An authentic vindaloo does use a fair amount of chillies, but that’s not its defining feature. It has wonderful spices, vinegar, ginger and garlic to bring the best out of the rich pork, and doesn’t have the thick sauce of curry house versions. This is a true vindaloo, with a light liquor and in this version of mine that I have learnt from my Grandmother.

Vindaloo Recipe—Anglo-Indian Recipe—Christmas Special
Pork vindaloo is hot-sour-spicy, almost pickle-like, braise of fatty pork with lots of garlic, vinegar and chillies. Vindaloo was born in Goa sometime in the 16th or 17th century after the Portuguese set up colony there. The word vindaloo comes from the Portuguese recipe 'vino de alhos' where 'vino' refers to (wine) vinegar and 'alho' is the word for garlic. Vindaloo is a fusion of Portuguese, Goan and South Indian ingredients and cooking.
This particular recipe comes from the book 'Curry: A Tale of Cooks and Conquerors' by Lizzie Collingham. The book, besides being one of the best writings on Indian food history, has some fantastic recipes such as this one. We looked at a lot of recipes, both online and in books, but honestly this recipe of vindaloo—though a little more elaborate in the number of spices—is in our opinion one of the best.
Considering just how good this vindaloo tastes, it is really easy to make if you have all the ingredients. While the original recipe used pork, you can use duck instead of pork too.

Our pork vindaloo recipe is a product of keen observation and experiment. We have had way too many mediocre vindaloos in Goa and outside it to know what a good one should taste like. Vindaloo by definition should be made out of wine and garlic, but it is not practical for every day cooking. Over the years, wine was replaced by palm vinegar and white vinegar in most households.
Vindaloo should not be made hot and spicy on purpose, just because someone said vindaloo is a fiery curry from Goa. Instead, heat should be the resultant factor of all the ingredients sensibly assembled to make a palatable curry. The heat should not numb your senses, but soothe you.
Follow our pork vindaloo recipe as is and you will end up with a curry that you are guaranteed to make again and again. Our recipe will yield 3 servings, with 449 kilocalories in each.
