How To make Tabbouleh (Cracked Wheat Salad)
1 c Bulghur (cracked wheat)
1/2 c Boiling water
2 Scallions, finely chopped
1/2 Sweet green pepper, cored,
-seeded, and diced 1/2 Stalk celery, diced
1/4 c Finely chopped Italian
-parsley 1/4 c Chopped fresh mint
1 Plum tomato, skinned,
-seeded, and chopped 1 tb Lemon juice
1 tb Olive oil
1/4 ts Salt
1/4 ts Pepper
1. Place bulghur in a small bowl; pour over the boiling water and let soak
10 to 15 minutes. Drain and squeeze dry.
2. Place bulgur in a serving bowl and add scallions, green pepper, celery,
parsley, mint, and tomato. Toss to mix. 3. In a screw-top jar combine lemon juice, oil, salt, and pepper. Shake to

About Tabbouleh
Tabbouleh (Arabic: تبولة, romanized: tabbūla; also tabouleh, tabbouli, tabouli, or taboulah) is a Levantine salad made mostly of finely chopped parsley, with tomatoes, mint, onion, bulgur (soaked, not cooked), and seasoned with olive oil, lemon juice, salt and sweet pepper. Some variations add lettuce or use semolina instead of bulgur. The wheat variety salamouni cultivated in the Beqaa Valley region in Lebanon, was considered (in the mid-19th century) as particularly well-suited for making bulgur, a basic ingredient of tabbouleh. Tabbouleh is traditionally served as part of a mezze in the Arab world. Its popularity has grown in Western cultures. The Levantine Arabic tabbūle is derived from the Arabic word tābil from the Aramaic root word t-b-l, meaning seasoning or more literally dip. It is usually served as part of a meze. The Syrian and the Lebanese use more parsley than bulgur wheat in their dish. |

Bulgur wheat Salad|TABOULEH| Watchmecook
This recipe demonstrates one the the ways i will be using Bulgur wheat as a replacement for white rice in some of my meals this year. based on what type of stock you use this recipe has the potential to be completely vegan. Bulgur wheat might also be known as cracked wheat or kiepe ble in some parts of the Caribbean and is often sold in two varieties and 3 different sizes. in this salad i am using light medium bulgur.

3 bunch italian parsley fine chopped
3 green onion fine chopped
12 fresh mint leaves chopped
1 cup small diced white onion
3 cup small diced tomatoes
1/4 cup brown burgol #1 soaked in 1/4 cup warm water
1 tbsp dried mint
1/3 cup fresh lemon juice
1/4 cup pomegranate juice
