How To make Sweet Corn Ravioli
2 teaspoons chives
2 ears fresh corn, kernels removed from cob
1 cup cream
Salt Pepper 1/2 pound raw shrimp, -- shelled and deveined
28 round wonton wrappers
2 eggs
Water
With a knife, roughly chop shrimp. In a food processor blend shrimp, corn and cream. Season with salt, pepper and chives. Lay out wanton wrappers and brush with an egg wash. Place 1 tablespoon of the shrimp mixture on one side of each wrapper. Fold over each wrapper and seal with a fork. Bring salted water to a boil and place ravioli in water. Poach for about 4 minutes. Serve ravioli with corn sauce

Overall, it has a very mellow flavor with a mild cheese flavor ???? that pairs nicely with the sweet corn kernels. I could barely taste the basil & would have liked if it was a little more prominent. I paired it with the vegan kale pesto which tasted very bright & summery. Although I prefer savory ravioli, this sweet ravioli is nice to throw into the mix once a year. Have you tried this yet?

My wife and I had been going on dates where we go somewhere or try something new each time. One of the times we went out, we hit a restaurant by us Seasons 52. One of the appetizers we had was Sweet Corn Ravioli. Well we liked it so much we kept making and tweaking it into a complete dinner, with these Sweet Corn Basil Ravioli! This is an awesome little twist on regular ravioli I know you are going to love. While the ravioli are good the sauce totally kills it! 20 Wonton Wrappers
Filling:
3/4 Cup Ricotta Cheese
1 Cob worth of Corn Kernels
1 Garlic Clove, Minced
1-1/2 Tbsp. Basil, Chopped
1/3 Cup Parmesan Cheese, Shredded
Salt
Sauce:
2 Bacon Slices, Chopped
1 Shallot, Diced
3 Garlic Cloves, Minced
1/4 Cup White Wine
1 Cob worth of Corn Kernels
2 Tbsp. Heavy Cream
1/4 Cup Water

Corn Ravioli from Chef Mark Miller
With its spicy filling, delicate corn pasta, and creamy
sauce, this dish — a Southwestern version of pasta
Alfredo — will wow guests. If you've ever made
ravioli, the recipe will be a new twist on an old
procedure. If you haven't tried it before, this is a good
place to start, as there is no substitute for the corn
ravioli that you can purchase. You will need a pastarolling
machine. The ravioli can be prepared up to a
day in advance and kept refrigerated before cooking.
The sauce can be made ahead, but it should be
reheated very slowly in the top of a double boiler; you
do not want the butter to break from the sauce. The
chili puree will last up to a week if kept in a sealed
container in the refrigerator.

If you're a Trader Joe's fan and want to elevate some dishes, try this easy-to-make fresh corn sauce. I took the corn kernels off the cob and put them through a juicer to extract the liquid.
By simply putting this over medium heat, you'll get the natural starch from the corn and it magically turns into a sauce. A few dashes of seasoning and BOOM. Amazing flavor that levels up your ready-made ravioli.
