How To make Stir Fried Noodles
16 oz Flat rice stick noodles
4 tb Vegetable oil
4 Garlic cloves; crushed
1 Yellow onion; chopped
1 1/2 lb Pork loin
-- cut into julienne strips 1/2 c Dried shrimp; soaked in:
1/2 c -Warm water (for 5 minutes)
2 Fresh red chilies
cut into julienne strips 1 ts White sugar
1/8 c Fish sauce
1 ts Salt
2 tb Lime juice
3 tb Ketchup
1 ts Ground black pepper
1 lb Fresh bean sprouts
:
washed, drained 4 tb Green onion, chopped
4 tb Fresh coriander, chopped
4 tb Roasted peanuts, crushed
In a pot of boiling water, drop in the flat rice stick noodles for about 1 minute, stirring constantly to prevent noodles from sticking together. Remove from heat and drain in a colander. Rinse with cold water. Set aside. Heat the oil in a large wok and stir-fry the garlic and onion until golden brown. Add the pork, shrimp in water, and chilies. Stir-fry for 5 minutes and add the sugar, fish sauce, salt, lime juice, ketchup, black pepper, noodles, and bean sprouts. Stir well for 2 minutes. Transfer to a large serving platter and garnish with green onion, fresh coriander, and peanuts. (Serves 6-8) From: stigle@cs.unca.edu (Sue Stigleman)

Today I am making stir-fried chicken chow mein easy. RECIPE LINK below! This recipe is similar to the way my local Chinese Take-Out restaurant makes it. The vegetables and sauce ingredient ratios are up to you. The noodles can be substituted with your favorite thin pasta as well. Chow mein is a staple in most Chinese restaurants and I have tried so many variations. This recipe is my recreation from one of my local spots I order take-out from. The addition of chicken makes this dish a hearty stir-fry dinner I love to make.

Tofu Stir Fry (30 min dinner idea)

Serve this quick Asian-inspired meal with noodles or rice as a weeknight dinner or wholesome lunch idea.
⭐️ Ingredients
14 - 16 ounces tofu firm or extra-firm
1 bell pepper yellow or red
6 mushrooms white or brown
1 - 1½ cups broccoli cut in small florets
2½ tablespoons canola oil or sunflower oil
3 scallions
3 cloves garlic grated
2 teaspoons ginger grated
¼ teaspoon red pepper flakes
½ teaspoon salt
Stir fry sauce
⅓ cup soy sauce we use reduced-sodium
2 tablespoons vinegar rice, white, or apple cider
1 tablespoon sugar
1 tablespoon sesame oil
1 tablespoon cornstarch
½ teaspoon salt
⅛ teaspoon black pepper

450 grams tofu firm or extra-firm
1 bell pepper yellow or red
6 mushrooms white or brown
120 grams broccoli cut in small florets
40 grams canola oil or sunflower oil
3 scallions
3 cloves garlic grated
2 teaspoons ginger grated
¼ teaspoon red pepper flakes
½ teaspoon salt
Stir fry sauce
80 grams soy sauce we use reduced-sodium
30 grams vinegar rice, white, or apple cider
15 grams sugar
12 grams sesame oil
8 grams cornstarch
½ teaspoon salt
⅛ teaspoon black pepper
