How To make Spiced Baked Sweet Potatoes
2 md Sweet potatoes
1 1/2 tb Vegetable oil
1 ts Curry powder
1/4 ts Turmeric
1/4 ts Cumin
1/4 ts Ginger powder
1/2 ts Salt
Pre-heat oven to 400F. Wash & scrub potatoes, leaving the skins on. Cut the into sticks & set aside. Mix together spices & oil. Add potato sticks to mixture & coat well. Lay onto a cookie sheet & bake for 30 to 40 minutes. Stir them half way through cooking. "Vegetarian Times" October, 1991

Baked Sweet Potato Fries
Here is what you'll need!
Ingredients:
2 large sweet potatoes
Water (for soaking)
2 Tbsp. corn starch
1 Tbsp. olive oil (or vegetable oil)
1/2 tsp pepper
1/2 tsp paprika
1/2 tsp garlic powder
1/2 tsp brown sugar
Salt (to taste)
Shredded parmesan (optional)
Chopped fresh parsley (optional)
Directions:
Rinse and peel sweet potatoes. To cut into fries, cut a small sliver off the edge of the potatoes lengthwise to create a flat side for them to rest on. Turn the potato over to lay on its flat side. Then cut lengthwise into 4-5 long slices (or 1/4-3/8 inch slices). Cut each slice lengthwise into 3-4 fries (1/4-3/8 inch).
Place the fries in a bowl of water and soak for 1 hour. (This helps remove excess starch from the potatoes so your fries will be crispier.)
Preheat the oven to 425°F / 220°C.
Rinse and dry off. In a large bowl or gallon bag, toss the fries with cornstarch until they’re evenly coated. Then add the oil and toss to coat. Add the pepper, paprika, garlic powder, and brown sugar and toss to evenly distribute your spices. (Hold off on adding the salt until after baking. This will help make sure the fries are crispy.)
Line a baking sheet with parchment paper or aluminum foil and spray with nonstick cooking spray. Lay out the french fries, being sure not to overcrowd the pan. (You may need two pans, depending on how large your pans are. Avoid overcrowding one pan or your fries may not crisp up.)
Bake for 15 minutes. Flip fries with tongs, then bake for an additional 10-15 minutes.
Sprinkle on salt (to taste) and serve! Add shredded parmesan and chopped parsley for an optional garnish. Enjoy with your favorite dipping sauce!

Savory Roasted Sweet Potatoes
Savory roasted sweet potatoes are totally comforting and satisfy your savory cravings when weather turns cold. Easy and healthy side dish that you can make and pair with any meal.
Prep Time: 15 minutes
Cook Time: 42 - 45 minutes
Servings: 6
Ingredients
3 large sweet potatoes, peeled and cut into 2 inch cubes
4 tablespoon olive oil
1 teaspoon garlic powder
1/2 teaspoon ground cumin
½ teaspoon smoked paprika
½ teaspoon chili powder, use cayenne for substitutions
¾ teaspoon salt
¼ teaspoon ground pepper
Fresh chopped parsley for garnish
Instructions:
To peel or not to peel skin off potatoes depends on personal preference. Of you decide to peel, scrub potatoes and rinse it well under tap water. Peel the skin off. Trim the edges.
Cut potatoes into half lengthwise.
Cut each half into 3 to 4 long wedges.
Note: if you plan to make roasted sweet potato wedges, you can cut into thin wedges length wise and then cut them in the middle so your wedges are finger length size.
Cut equal sized cubes. Make sure they are all even size for uniform cooking. Cut them as small as ½ inch cubes to as chunky as 2 inch cubes. You choose!
Transfer cut potatoes onto a baking sheet.
Drizzle generous amount of olive oil over the potatoes.
Add in all the spices along with salt and ground pepper.
Mix well to coat even.
Jo’s Tip: Use your finger to mix in the spices into the potatoes. It ensures each potato piece is evenly coated.
Arrange it in a single layer.
Roast in pre-heated oven at 425 degree Fahrenheit for 45 – 55 minutes, tossing the sweet potatoes every 10 -15 minutes to prevent it from burning and to get even cook and caramelization on every piece.
Remove from oven. Garnish with fresh parsley.
Serve immediately with your favorite dish.

Sweet potatoes make life so much better, don't they!? They are delicious, healthy, and so very versatile. Despite the many ways to use them, my favorite is to simply roast them to perfection.

Spicy Sweet Potatoes - Lynn's Recipes
A delicious side dish that is spicy and sweet. Super easy and requires ingredients that you probably already have on hand. Adapted from a recipe on Pinterest.
2 large sweet potatoes, peeled and cut into 1 cubes
2 -1/2 Tablespoons olive oil
2-1/2 Tablespoons brown sugar
1 teaspoon chili powder
½ teaspoon salt
¼ teaspoon cayenne pepper
Honey
Put sweet potatoes that have been peeled and cubed in a bowl.
Combine olive oil, brown sugar, chili powder, salt and cayenne pepper with the potatoes and stir well. Let sit on counter for 10 minutes, stirring after 5 minutes to make sure everything is well coated.
Spray a cookie sheet or line it with non-stick aluminum foil. Use a cookie sheet that has sides. Pour the potatoes and coating on the cookie sheet a drizzle with honey. Bake in a preheated 400° oven for 40-45 minutes or until tender, stirring about every 10 minutes.
