Puff Pastry Using Ghee
Recipe in English:
Ingredients:
-Ghee 400 gms
-Pani (Water) 200 ml
-Anda (Egg) 1 (Optional)
-Oil 4 tbs
-Namak (Salt) 1 tsp
-Cheeni (Sugar) Powdered 2 tbs
-Maida (All-purpose flour) 500 gms
-Pani (Water) if required
Directions:
-In wok,add ghee,let it melt and bring it to room temperature.
-In bowl,add chilled water with ice cubes,melted ghee,leave it until ghee becomes solid and refrigerate for approx.6 hours.
-In jug,add water,egg,oil,salt,sugar and whisk well.
-In bowl,add all-purpose flour and make a well,gradually add egg water mixture and knead until smooth & soft dough is formed.Use water if required cover and let it rest for 20 minutes.
-Take out solid ghee from water and squeeze out excess water completely.
-Take square pan,place butter paper and set a block in a square pan.
-Place butter paper on top and with the help of kitchen hammer flatten ghee and freeze ghee block for 20 minutes.
-Take prepared dough,sprinkle generous amount of flour and roll out dough in round shape with the help of rolling pin.
-In the center of the dough,place solid ghee block,wrap four sides,dust dry flour and roll out in rectangular shape with the help of rolling pin,fold one third into the middle and then the other third on top,fold and overlap the remaining sides,cover and freeze it for 20 minutes.
-Take out from freezer,dust dry flour and roll out in rectangular shape with rolling pin.
-Repeat the same over lapping folding process,cover and freeze it for 20 minutes.
-Again take out from freezer,dust dry flour and roll out in rectangular shape with rolling pin.
-Puff pastry is ready and use as required.
Tips:
-If you are using butter,follow the same puff pastry method.
-If you are using ghee,freeze it for 15-20 minutes and if you are using unipuff,put it in fridge for 15-20 minutes.
-Sprinkle generous amount of all-purpose flour while you are rolling or overlapping puff pastry.
-In puff pastry recipes,egg is optional.
-Put the ghee (with chilled ice cold water) in refrigerator until ghee becomes solid.

-Karhai mein ghee dal ker melt ker lein aur room temperature per thanda ker lein.
-Bowl mein thanda pani baraf ka saath aur melted ghee dal dein aur chor dein jab tak ghee solid form mein ajaye aur 6 hours kliya refrigerate ker lein.
-Jug mein pani,anda,oil aur namak dal ker ache tarhan whisk ker lein.
-Bowl mein maida dal dein,well bana lein aur thora thora ker ka egg water mixture daltay jayein aur ghond ker smooth & soft dough tayyar ker lein.Agar zaroorat ho tou pani dal ker ghond lein,dhak ker 20 minutes kliya rakh dein.
-Solid ghee ko pani sa nikal lein aur ache tarhan nichore lein.
-Square pan la ker butter paper laga lein aur square pan mein block ko set ker lein.
-Upper sa butter paper laga ker kitchen hammer ki madad sa ghee ko flat ker lein aur 20 minute kliya freeze ker lein.
-Tayyar dough per bohat sara maida chirak ker rolling pin ki madad sa round shape mein bail lein.
-Dough ka bech mein solid ghee block rakh dein aur four sides ko wrap ker lein,maida chirak ker rectangular shape mein rolling pin ki madad sa bail lein,one third side ko middle tak fold ker lein phir dosray third part ko bhi fold ker lein,baqi bache hoye sides ko overlap fold ker lein aur dhak ker 20 minutes kliya freeze ker lein.
-Freezer sa nikal ker maida chirak dein aur rectangular shape mein rolling pin ki madad sa bail lein.
-Yehe over lapping folding ko dubara karein aur dhak ker 20 minutes kliya freeze ker lein.
-Freezer sa nikal ker maida chirak dein aur rectangular shape mein rolling pin ki madad sa bail lein.
-Puff pastry tayyar hai,zaroorat ka mutabiq istemal karein.
Tips:
-Agar makhan use ker raha han tou same yehe puff pastry ka method follow karein.
-Agar ghee use ker raha ha tou 15-20 minutes kliya freeze karein aur agar unipuff use ker raha han tou 15-20 minutes kliya fridge mein rakh dein.
-Puff pastry ko rolling ya overlapping kertay hoye bohat sara maida chirak dein.
-Puff pastry mein anda optional hai.
-Ghee ko chilled pani aur baraf ka saath refrigerator mein rakah dein jab tak ghee solid na ho jaye.

RICOTTA AND SPINACH PIE
INGREDIENTS:
2 sheets of puff pastry (thawed out or fresh)
500g fresh ricotta
120g baby spinach (chopped)
2 x eggs
Pecorino cheese
Salt & Pepper
Nutmeg
Oil spray (Or baking paper to line the baking dish)
UTENSILS:
Round pie dish
1 x sharp knife
1 x fork
Spatula
Large mixing bowl
Pastry brush
METHOD:
1. Preheat your oven to 180 degrees.
2. Put the ricotta into the bowl and begin to break it down using a fork.
3. Add chopped baby spinach and a generous handful of grated pecorino cheese.
4. Mix together well and add a sprinkle of salt and pepper and a touch of nutmeg.
5. Add an egg and mix together once again.
6. Once the ingredients are mixed and the filling looks much creamier, it is ready.
7. Line a baking dish with one sheet of puff pastry and prick the bottom of it using a fork so it helps it to cook through.
8. Fill it using the ricotta mixture and even it out as much as you can using a spatula.
9. Cover the pie with another sheet of puff pastry, angling it so that the edges cover any gaps.
10. Create a crust by gently folding down the edges and joining the two layers together.
11. Press down around the edges using the teeth of a fork.
12. Beat an egg lightly in a small cup and add a drop of water.
13. Brush the egg mix over the top of the pie using a pastry brush.
14. Cook in the oven at 180 degrees celcius for 40 minutes or until golden.
HOW TO SERVE
1. Let the pie rest and cool for up to ten minutes, then slice into triangular serves and place on a wooden board

Master the Art of Mushroom Puff Pastry with this Easy Recipe #recipe
Mushroom puff pastry recipe MUSHROOM GRUYERE TART ????
Would you LOOK at all those mushrooms? If you're a mushroom lover (like me), you're going to simply love this small savory tart. Loaded with mushrooms and gruyere cheese, this Puff Pastry Mushroom Gruyere Tart is perfect for entertaining and tastes amazing!
INGREDIENTS:
•Puff pastry - Make sure to complete thaw it in the refrigerator before using it in this recipe. (1 sheet of dough)
•Cheese - I really love gruyere cheese in this dish. (200 g)
•Mushrooms -You can use mixed mushrooms, porcini mushrooms or your favorite mushrooms. (400 g)
•Butter - Unsalted butter will add additional flavor to the mushrooms.
(2 tbsp)
•Olive Oil exstra virgins (1 tbsp)
•Thyme - Fresh thyme is the perfect herb for mushrooms (3 twigs)
•Egg - We only use a little bit of the egg to brush onto the outer edges. The eggwash is what gives the pastry the perfectly browned edges.

STEP 1:
The puff pastry should be completed thawed in the refrigerator and the oven will need to be preheated to 400 degrees F (205 C)
(If you have unfrozen fresh dough then skip this step) you will need to lay out the pastry and make serrated edges with a knife or pizza cutter, leaving about ½ inch around each edge. One cup of shredded gruyere cheese should be spread out over the pastry leaving the border clean.
STEP 2:
After mushrooms are prepped and clean, saute them in a little olive oil and butter for 6-8 minutes. Add salt and fresh ground black pepper to taste. Drain any excess liquid when finished, then spread them out across the cheese.
STEP 3:
Prepare an egg wash by whisking egg yolk and 2 tbsp of milk. After the pastry bakes for about 15 minutes, use a pastry brush to lightly brush egg wash over the border. Return to oven and bake 5-10 more minutes until it turns light brown in color.
STEP 4:
Assemble and Serve
Remove from the oven and garnish with thyme (if desired). Cut pastry into four pieces and serve warm.
