How To make Prawn and Cucumber Salad
Text Only This salad is particularly pretty as well as good to cat and, being Thai in origin, is completely oil free and low kilojoules. Drop 600 g raw prawns into boiling water for about 3 minutes or just until they turn pink. Set the saucepan aside and keep the prawns cool in the liquid. Peel a cucumber about 350 g in weight and slice it thinly. Shell the prawns and halve them lengthwise. Arrange, prawns and cucumber decoratively in a serving dish. Make a dressing by combining 3 finely chopped shallots, 2 tablespoons lemon juice, 1 tablespoon fish sauce and one small chilli, chopped finely. Spoon the dressing over the salad and scatter over the top 2 tablespoons chopped parsley. Leave flavours to combine for half an hour before serving. Makes 4 servings. Ingredients
20 large cooked prawns
2 large cucumbers
small bunch coriander
1 large red chilli, halved, deseeded and cut into large pieces
1 tbsp soft brown sugar
2 tbsp Thai fish sauce
1 lime, juice only
handful roasted cashews or peanuts, crushed
Method
1.Cut each prawn in half lengthways, removing the vein that runs down the back. Using a vegetable peeler, strip the cucumber of all its skin and discard, then continue to peel away long strips of the cucumber flesh until you reach the seeds. Chop the coriander and mix with the cucumber strips and prawns.
2.Make the dressing in a pestle and mortar by pounding together the chilli and sugar into a paste. Add the fish sauce and lime juice to the paste, and stir well. Pour over the salad just before serving, with the nuts sprinkled on top.

1 pound colossal shrimp peeled and deveined
A half a cup of imitation crab chunk or flake style
1/3 of a cup chopped cucumber
1/3 of a cup chopped celery
1/4 of a cup finely minced red onion
1 1/2 lemons
1/2 a cup of mayonnaise
one teaspoon dried dill
1/2 a teaspoon old Bay seasoning
1/2 a teaspoon Dijon mustard
Salt and pepper
