Cooking burgers on the new Backline grill
Just picked up my new custom Backline grill, trying it out with some burgers.
What a beast! Ya'll need to check them out, they make amazing smokers, but also have a great range of live fire gear like this ... and every piece is custom.
Blindsided venison burgers
Today we grilled some venison burgers. We seasoned these burgers with the Blind sided rub from Four 41 south and sauced them with patriot BBQ sauce from code 3 spices. This is a very good rub that I have tried on pork steaks, pork chops and now in Venison burger.

Garlic Roasted Mushroom Burgers - #MeatFreeMonday
GARLIC ROASTED MUSHROOM BURGERS
Bite into a big, juicy Garlic Roasted Mushroom Burger – a no-fuss meal that’s satisfying and delicious!
Serves 4
Prep time: 10 minutes
Cook time: 10 minutes
Ready time: 20 minutes
INGREDIENTS
For the marinade
• 6 cloves garlic
• 1 large sprig fresh rosemary
• 4 tablespoons olive oil
• 1 tablespoon agave syrup (optional)
• 1 teaspoon truffle oil (optional)
• salt and pepper
For the burgers
• 4 Portobello mushrooms
• plant-based cheese slices (optional)
• 4 burger buns
Toppings of choice
• sliced tomato
• gem lettuce
• cucumber pickles
• white onion, sliced into thin rings
• tomato sauce
• plant-based mayonnaise
METHOD
1. Start by cutting off any particularly large or woody stems from the Portobello mushrooms.
2. Thinly mince or crush the garlic into a mixing bowl and add the rest of the marinade ingredients.
3. Using a teaspoon or pastry brush, cover the mushrooms with the garlicky oil marinade and brush thoroughly into all the cracks and gills. (They can be left in the fridge to marinate for up to 6 hours, if you would like to do this part ahead of time.)
4. Preheat a frying pan or the grill setting of an oven, and fry or grill the mushrooms on a medium to high heat for 8-10 minutes, until they have given up some of their water and become juicy and crispy.
5. Top with the plant-based cheese slices for the last few minutes of cooking time to melt the cheese.
6. Toast the burger buns and assemble the burgers! We suggest slices of tomatoes (lightly salted), gem lettuce leaves, cucumber pickles, onion rings and plenty of tomato sauce and plant-based mayonnaise.

How to Cook Burgers On a Charcoal Grill Best Burgers Ever
There are several ways you can cook burgers on the grill.
Keep in mind what kind of meat you buy,
What kind of Charcoal you use,
and the type of grill you are using.
If you happen to have a cheap $20-30 grill, Great! These lil Grills work Great, but do not like to stay sturdy over a few years.
Once you place your burgers on such a grill and your fire takes over, all you have to do is close your lid (and vents) and your fire will die out shortly.
Once your flames have gone out, reopen your grill and monitor your burgers.
Continue this process if lots of fire resume.
I do not recommend Leaving your small grill closed for long periods of time while cooking, soot from the ashes can coat the meat, looking black/gray and tasting horrible.
If you have a larger area inside like my grill above (or a smoker) you can close the lid while cooking your burgers.
Give your burgers a 7-8 min cook time on each side until they look ready.
I do not recommend Wal-Mart Brand Charcoal of any kind. It is very rich in fuel and thus transfers into your meat. The meat will taste different and you will be exhaling horrible tasting gas (sometimes over a few days).
