[ENG] Moroccan Lentil Soup / العدس على الطريقة المغربية - CookingWithAlia - Episode 462
Today, we're kicking off a new series called The comfort series. I'm going to show you a few of my go to comfort food recipes to make you happy. Let's start this series with this simple and easy recipe Moroccan Lentil Soup!!!
RECIPE:
INGREDIENTS:
250 grams (1 1/4 cups) brown lentils, soaked in water overnight
1 large onion
1 large tomato
3 tablespoons finely chopped parsley
2 teaspoons paprika
Salt and pepper, to taste
3 tablespoons olive oil
1 liter (4 cups) water
DIRECTIONS:
Step 1: Preparing the Ingredients
1- Soak the lentils in water overnight so they become soft and cook easily. Drain them from the water.
2- Cut the top of the tomato then cut into quarters. Grate the pulp of the tomato and discard the skin.
3- Finely chop the parsley.
4- Peel the onion, cut it in half, and finely chop it.
Step2: Cooking the lentils
1- On medium heat, in a large pot, add the olive oil. Once hot, add the chopped onion, grated tomato, and lentils. Mix.
2- Add the chopped parsley and continue mixing.
3- Add the spices: paprika, salt, and pepper.
4- Mix and cook on medium heat for around 10 minutes.
5- Add boiling water to the lentils, cover the pan, and cook for 30 minutes. Stir from time to time.
6- After 30 minutes, taste the sauce and adjust the spices accordingly: salt, pepper, and paprika.
7- Serve hot in a bowl with a piece of bread. Bon Appetit!

One of the things I love about this soup is that it is incredibly flavorful. It contains a lot of Moroccan spices – cumin, coriander, ginger, and cayenne pepper – bold, fragrant, and vibrant.
The recipe is vegan (dairy-free, egg-free), grain-free (gluten-free), soy-free, nut-free, and refined sugar-free.

???? Detox Lentil Soup Ingredients:
1 Tbsp Olive Oil
1 cup Onion, chopped
1 cup Carrot, chopped
1 cup Celery, chopped
2 Garlic Cloves, Minced
1 cup Potato, chopped
1 tsp Turmeric
2 tsp Ground Ginger
2 tsp Smoked Paprika
2 tsp Ground Cumin
1 tsp Ground Cinnamon
1 tsp Sea Salt (plus more to taste)
1/2 tsp black pepper (plus more to taste)
1 cup Red Lentils
1 cup Green or Brown Lentils
4 cups Vegetable Broth
2 cups Water
1 Tbsp Tomato Paste
1/2 cup Plain Unsweetened Almond Milk or Coconut Milk
2 cups Spinach
1 Tbsp Lemon Juice
1 tsp Coconut Yogurt for garnish
Chopped Parsley for garnish
???? Detox Lentil Soup Instructions:
1. Heat the olive oil in a dutch oven or large stock pot. Add onions, celery, carrot and cook for about 2 minutes. Add potato and cook for 3 minutes until everything softens slightly.
2. Add spices, salt and pepper and cook for about 2 minutes.
3. Add lentils and cook for 1-2 minutes. Add vegetable broth, water and tomato paste. Bring the soup to a boil, cover and reduce to simmer, about 25-30 minutes.
4. Add almond milk and spinach. Cook for 1 minute.
5. Add lemon juice. Turn off the heat and add remaining spinach.
6. Top with coconut yogurt, chopped parsley or your favorite toppings.

Ingredients
1/4 cup olive oil
12 oz (340g) boneless lamb, chicken, or beef
1 large onion, finely chopped
5-6 garlic cloves, grated
28 oz (800g) crushed tomatoes
2 tablespoons tomato paste
2 ribs celery with leaves, finely chopped
15 oz (425g) canned cooked chickpeas, rinsed and drained
1 cup uncooked green lentils, soaked and rinsed
1/4 cup rice or vermicelli noodles
8 cups chicken broth or water
1 tablespoon all-purpose flour
lemon wedges
1 cup finely chopped fresh parsley or cilantro leaves
The Spices:
2 teaspoons salt, or to taste
1/2 teaspoon freshly ground black pepper, or to taste
1/2 teaspoon ground turmeric
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1/4 teaspoon ground dried ginger
crushed red pepper flakes, to taste
Instructions
Cut the lamb into about 1/2-inch pieces, around the same size of the chickpeas. Add teh lamb to a large dutch oven pot along with the olive oil.
Cook the lamb over medium heat until browned. About 5-8 minutes.
Add the onion and a pinch of salt. Cook until the onion is soft. About 7-8 minutes over medium heat.
Add the garlic and warm through for a few seconds until fragrant.
Add the tomato paste and the spices and cook for about a minute taking care not to burn the spices.
Add the celery, broth, tomatoes, chickpeas, and lentils and bring to a boil. Reduce the heat to medium-low and cook for 45 minutes or until the chickpeas and meat is soft and tender.
Combine the flour with 3-4 tablespoons of water and mix together until smooth. Add to the soup along with the vermicelli noodles. Mix together and add more liquid if needed. Also taste and adjust the seasoning if needed. Cook for 10-15 minutes or until the noodles are cooked and the soup has thickened.
The soup should be thick but at a pourable constistency.
Top with the cilantro and serve with lemon wedges. Kali Orexi!
Notes
Make it vegan: Omit the lamb and follow the recipe.
Gluten-free: Omit the flour and vermicelli and add rice instead.
Instant Pot: Set the Instant Pot to saute and add the olive oil and lamb. Cook until golden. Add the onion and saute until golden. Add the garlic, tomato paste and spices and toast until fragrant. Add all of the remaining ingredients except for the flour, cilantro, and vermicelli. Set the intsant Pot to High Pressure and seal the vent. Pressure cook for 20 minutes. Allow the pressure to naturally release for 10 minutes. Carefully remove the lid and set the Instant Pot to the Saute Setting. Add the flour and water mixture, the vermicelli, and the cilantro. Taste and adjust the seasoning if needed and add more broth also if needed. Cook until the vermicelli is cooked and the soup has thickened.

The BEST Authentic Lebanese Lentil Soup Recipe!
You will need:
2 cups red lentils
1 medium-large yellow onion
1 clove garlic
1 tbsp grated fresh ginger
1 tsp salt
1 tsp cumin
2 tbsp olive oil
1/4 tsp turmeric powder (optional for color)
1/4 tsp sumac (optional for garnishing)
1 slice of lemon (optional for garnishing)

Moroccan Lentil Soup
So you want something that is filling and will help you fight off those hunger pains most of the day, then this is the soup for you. I used this soup to lose or control my weight because of its low-calorie count. But if you would like to make it more like a meal, then I would add some chicken or turkey to it.
This soup becomes better with its complex seasonings, so I recommend that you make it a day ahead before serving. Any way you make it, it will always turn out great.

Options - add
Chicken or turkey
Fresh spinach
Hot red peppers
Slow-Cooker settings - On low - 6 hrs., On high - 3 hrs.
