How To make Jerk Chicken
1 T Ground allspice
1 T Dried thyme
1 1/2 t Cayenne pepper
1 1/2 t Black pepper
1 1/2 t Ground sage
3/4 t Grated nutmeg
3/4 t Cinnamon
2 T Salt
2 T Garlic powder
1 T Sugar
1/4 c Soya sauce
3/4 c Vinegar
1/2 c Orange juice
1/4 c Olive oil
1 c Minced onion
3 ea Green onions
4 ea Chicken breasts, halves
In large glass or ceramic bowl combine allspice, thyme, cayenne pepper, black pepper, sage, nutmeg, cinnamon, salt, garlic powder and sugar. Slowly whisk in soy sauce, vinegar, orange juice. In slow stream whisk in olive oil. Add onion and green onion. Combine well. Add chicken and allow to marinate 1 hour at room temperature or over night, covered in refrigerator. If using outdoor grill toss 1 or 2 bay leaves on coals. Grill chicken 6 min. each side. Chicken may also be broiled indoors 5-6 min. each side. Either way, brush well with marinate while cooking. For hotter flavour, double amounts of first 7 ingredients.

How to make Jamaican Jerk Chicken on the grill
Jerk chicken recipe
Soak 8 leg quarters in salt water
Remove fat
Chop up 1 yellow onion, 8 scallions, and 5 scotch bonnet peppers into small pieces (use 9 scotch bonnet peppers if you like very spicy jerk chicken) and chop 2 limes in half
Put the chopped veggies in a food processor
Add 2 tbs of minced garlic, 1/4 cup of olive oil, 1/4 cup of apple cider vinegar, 1/2 cup of soy sauce, and squeeze fresh juice from 2 limes. Add 3 tbs of brown sugar, 2 tbs of ground Jamaican all spice, 2 tbs of dried thyme, 1 tbs of salt, 1 tsp of cinnamon, 1 tsp of ground ginger, 1 tsp of nutmeg, 1 tsp of black pepper.
Blend in processor until a smoothie consistency
Poke holes in chicken
Poor jerk seasoning marinade in a big bowl and add chicken to marinade
Massage well
Marinate in refrigerator overnight
Place on grill until crispy and cooked all way through

In the 1700’s, a group of Africans who became known as Maroons combined African meat cooking techniques with a mix of Jamaican spices. Their cooking style evolved to what we know today as jerk. For this jerk seasoning you'll need...
6 scallions
10-14 sprigs thyme
2 scotch bonnet peppers
2 tablespoon brown sugar
1 tablespoon Pimento (allspice) powder
1 teaspoon ground cinnamon
1 lime
1 lemon
4-5 thick slices of ginger
8 cloves garlic
1 1/2 tablespoon olive oil
1 tablespoon honey
2 tablespoon rice vinegar
2 tablespoon dark soy sauce
1/4 cup orange juice
2 medium onions

1 tbsp Dry Jerk Seasoning (Chief Brand) or any kind of your choice

3-4 tbsp wet jerk seasoning

Cooking time 1 hour 20 minutes
Oven temperature 200 degree, 250 degree for the last 15 minutes to acquire the Char Jerk effect.
