Minoru Sano is a legendary Japanese ramen chef who was decades ahead of his time. This is my attempt to recreate his recipe for his shio ramen soup. This was from an old book or magazine and I'm sure his recipe at his shop was not exactly this, everyone has secrets, but my God, it was amazing. But there was a catch. This soup must be eaten the day its made. It loses a lot of flavor if you rest it.

Ingredients
Shio Tare (You probably want to scale this down too, it makes a lot and its expensive to make):
500cc dashi
- 50g rishiri konbu
- 35g mejimaguro-bushi
165g salt
100cc sake
30cc mirin
10cc vinegar
30cc koikuchi shoyu
Soup (scaled down):
1kg chicken backs
330g chicken feet
330g pork femur bones
66g pork fat
2/3 onion
2/3 carrot
1 garlic
15g ginger
1/4 cabbage
1 long green onion
16g dried shrimp
4L water
Dashi:
26g konbu
2 dried shiitake
1L water
33g katsuobushi (thick cut)

Shoyu Ramen
Ingredients
For the Broth (Makes 8 to 10 servings)
6 lb pork neck bones
2 oz ginger, sliced
2 bulbs garlic, cut into halves
1 large leek, cut into half and wash every layers really well then drain
1 1/2 oz kombu, dried kelp
1 1/2 Tbsp chicken stock powder
24 cups cold water
For the Chashu (Makes 8 to 10 servings)
2 lb pork belly or pork butt
For the Tare (Sauce) (Makes 8 to 10 servings)
1 1/2 cup soy sauce
3/4 cup sake
3/4 cup mirin
ginger, sliced
1 clove garlic, crushed
For the Ramen Bowl (Makes 1 serving with below ingredients)
3 oz bean sprouts
1 portion of fresh, frozen (5 oz each) or dried (3 oz each) ramen noodles
2 green onions, chopped
1 soft boiled egg, cut into half
1 garlic cloves

This udon noodle soup recipe is so simple to make at home – all you need are a few basic Japanese ingredients: dashi powder, soy sauce, and mirin (sweet rice wine). Even better, these ingredients can also be used as the base for a wide range of essential Japanese dishes – our favourites are okonomiyaki savoury pancakes, onigiri rice balls and gyoza dumplings.
Udon noodles are a fantastic dish to slurp down when you’re in a rush. But we like to take our time a little more to appreciate the subtle flavours, and enjoy the differences of the dashi stock between restaurants, home made and powder form.
The great thing about this dish is the ability to make it as quick or a slow as you like, depending on how hands-on you want to be, and what toppings you’d like. While our Udon Noodle Soup Recipe uses only basic ingredients for a quick eat, below are some further ideas for beefing up your dish.

1 packet udon noodles frozen or fresh
1 cup boiling water
1 tsp dashi powder use kombu dashi for vegan/vegetarian version
1 tsp soy sauce
1 tsp mirin
1 pinch salt
1 pinch sugar
Optional Toppings:
1 stalk spring onion / green onion finely sliced diagonally
2 tsp bonito flakes / katsuobushi
1 pinch chilli flakes shichimi togarashi
