How To make Honey Mustard Turkey Meatballs
1 pound ground turkey breast
1 egg
lightly beaten
3/4 cup reduced fat ritzr crackers :
crushed
1/2 cup mozzarella cheese part skim milk,

shredded 1/4 cup onion chopped 1/2
:
teaspoon ground ginger 6 tablespoons dijon mustard divided
1 1/4 cups unsweetened pineapple juice
1/4 cup green pepper :
chopped
2 tablespoons honey
1 tablespoon cornstarch
1/4 teaspoon onion powder
In a bowl, combine turkey, egg, cracker crumbs, cheese, onion, ginger and 3 tab lespoons mustard. Form into 30 balls, 1 inch each. Place in a greased 13-inch X 9-inch X 2-inch baking dish. Bake, uncovered, at 350 degrees for 20 - 25 mi
nutes or until juices run clear. In a saucepan, combine pineapple juice, green pepper, honey, cornstarch and onion powder; bring to a boil, stirring constant ly. Cook and stir 2 minutes more; reduce heat. Stir in remaining mustard unti l smooth. Brush meatballs with about 1/4 cup sauce and return to the oven for 1 0 minutes. Serve remaining sauce as a dip for meatballs.

The BEST Keto Air Fryer (or oven) Turkey Meatballs Recipe
I'm not a keto dieter (love my carbs too much ????) but I wanted to create this recipe for all my keto lovers. These turkey meatballs are so darn good, especially with the mozzarella cheese oozing out of them! You can air fry them for a crispier meatball or pop them in the oven as well. The macros below are for the entire recipe so just divide based on how many meatballs you make/eat (depends on size you roll them in, mine came out to 13 medium ones). Perfect for a meal with a side or as a snack!

????INGREDIENTS:
◾️1 lb ground turkey (I used 93% lean)
◾️1 egg
◾️2 tbsp fresh basil (can use dry as well)
◾️2 garlic cloves, minced
◾️3 tbsp freshly grated parmesan cheese
◾️1 tsp salt
◾️1/2 tsp pepper
◾️1 tbsp olive oil
◾️2 oz mozzarella cheese cut into little cubes
Air fry turkey meatballs on 400 degrees for 10 min, then flip them over and do another 5 minutes.
Oven – 400 degrees 22-25 minutes, no need to flip them

A lighter alternative to regular meatballs, these turkey meatballs are tender and delicious! They're all cooked in one pan, along with the rich tomato sauce and courgetti (zoodles), so we're keeping excess washing up to a minimum! A fantastic lighter Summer dinner.

Ingredients for the Turkey Meatballs:
500 g (1.1lb) turkey thigh mince
3 tbsp olive oil
3 tbsp grated parmesan
1 medium egg
1 large onion - peeled and finely chopped
½ slice of wholemeal bread - grated
¼ tsp salt
¼ tsp ground black pepper
2 celery stalks - thinly sliced
2 cloves garlic - peeled and minced
400 g (14oz) tin of chopped tomatoes
2 tbsp tomato puree/paste
1 tsp dried thyme
1 tsp honey
100 ml (1/3 cup) chicken or vegetable stock - water plus half a stock cube is fine (or 1/2 tsp bouillon for gluten-free)
2 medium-sized courgettes (zucchini) - spiralized
To Serve:
Freshly grated parmesan
Black pepper
Small bunch flat-leaf parsley - roughly chopped

Easy Greek Turkey Meatballs Recipe | Baked or Pan-Seared!
Greek Turkey Meatballs are full of fresh mint and parsley and loaded with Mediterranean flavor. You can quickly cook these healthy meatballs in a skillet to get a crusty sear or bake them in the oven for easy clean-up. This low-carb and gluten-free Greek dish can also be meal prepped for busy weeks or frozen for later!
PRINTABLE RECIPE:
INGREDIENTS:
1 lb. ground turkey 93/7
1 egg large, whisked
½ cup breadcrumbs plain, gluten-free or low-carb*
½ cup red onion finely chopped
2 Tbsp. mint leaves fresh, finely chopped
2 Tbsp. parsley fresh, finely chopped
1 Tbsp. Greek seasoning homemade
½ - ¾ tsp. salt to taste
3 Tbsp. flour gluten-free, optional
2 Tbsp. oil avocado or olive
INSTRUCTIONS:
Combine ground turkey, whisked egg, breadcrumbs, onion, mint, parsley, Greek seasoning, and salt in a large bowl.
Mix until well combined by either using a spatula or your hands.
Scoop out 2 tablespoons of mixture and roll into a bowl. Spray a bit of non-stick cooking spray on your hands if you’re having trouble with the mixture sticking.
Repeat with the remaining meat mixture until you have 20 meatballs.
Optional: (Skip this step if baking the meatballs in the oven.) Place flour in a medium-sized shallow bowl and roll the meatballs in it. Shake off any excess flour.
To Pan-Sear:
Place a large stainless steel or non-stick skillet over medium heat along with 1 tablespoon of oil.
Add 10 of the meatballs to the skillet in a single layer. Cook for 7-9 minutes, turning every 1-2 minutes. You’ll know the meatballs are done cooking when the internal temperature reaches 165°F.
To Bake:
Preheat oven to 375°F.
Line a large baking sheet with a piece of parchment paper.
Place meatballs evenly spaced on the baking sheet.
Bake in preheated oven for 18-22 minutes, or until meatballs are cooked through.
Serve Greek turkey meatballs with a side of Tzatziki sauce and homemade pita bread. Enjoy!
RECIPE NOTES:
You can also substitute with a low-carb pork Panko if you're on a low-carb diet.
Storing: These ground turkey meatballs will last for up to 3-4 days if stored in an airtight container in the refrigerator.
To freeze: Place them on a large baking sheet and pre-freeze for 3-4 hours. Once firm, add the meatballs to a freezer-safe container or gallon-sized Ziploc bag. These meatballs will freeze well for up to a year, but do start to loose their quality after 3-4 months.
