✅Ingredients
• 1 pint red cherry or grape tomatoes, halved
• 1 pint yellow cherry or grape tomatoes, halved
• 2 large avocados, pitted, peeled, and diced
• 8 ounces mini mozzarella balls
• ½ cup fresh basil, chiffonade
• 3 tablespoons honey
• 3 tablespoons white balsamic vinegar
• 3 tablespoons extra virgin olive oil
• ¼ teaspoon salt
• ¼ teaspoon black pepper
✅Instructions
1️⃣ In a large bowl, toss together red tomatoes, yellow tomatoes, diced avocado, mini mozzarella balls, and basil.
2️⃣ In another small microwave safe bowl, heat honey for 15-20 seconds in the microwave to thin out. Whisk together with white balsamic and olive oil.
3️⃣ Pour dressing over tomatoes and basil. Season with salt and pepper (to taste) and toss to combine.

How to Make Guacamole Potato Salad!
This dish is a combination of two of our favourite things. It’s great on it’s own, or as a side to a BBQ or another dish. Plus it’s super easy!
Ingredients:
Sauce:
3 avocados
3 tbsp olive oil
Juice of 2 lemons
1 tbsp egg free mayo
2 tbsp dairy free butter
1/3 cup soy milk
Pinch salt
4 cups cooked potatoes
1 red onion
1 cup cherry tomatoes
1/4 cup chilli
1/2 cup cilantro
Method:
1 Whizz up all the sauce ingredients into a well blended sauce
2 Pour over the pre-cooked potatoes
3 Add the onion, tomatoes, chilli and cilantro
4 Mix well and serve.

Serves 5-6
INGREDIENTS
Dressing
1 avocado, halved
1 clove garlic
½ teaspoon salt
½ teaspoon pepper
¼ cup olive oil
1 tablespoon cilantro
1 lime, juiced
Salad
1 head of lettuce, chopped
1 cup bell peppers, chopped
¼ cup cilantro
15 ounces (1 can) black beans
½ cup red onion, chopped
15 ounces (1 can) corn
¼ cup scallions
¾ cup tomatoes, chopped
PREPARATION
Add all dressing ingredients to a blender, blend until smooth.
In a large bowl add lettuce, peppers, cilantro, beans, onion, corn, green onion, and tomatoes.
Top with prepared dressing; toss to coat.
