FRENCH ONION SOUP ????????????
1. Slice 4 cups of onion and cook over medium heat with 1 tbsp each of butter, olive oil, salt and pepper until the onions are soft and translucent.
2. Once the onions are cooked down, add 1 tbsp grated garlic and 1 tsp dried thyme and cook with onions until they are golden brown and caramelized - about 20-30 minutes.
3. Add 4 cups of beef stock, 1 tbsp Worcestershire sauce, and 1 bay leaf to the pot and cook until the broth comes up to a boil.
4. Add slices of your favorite crusty bread - you can use a French baguette but had sourdough on hand this time - on top of the soup.
5. Add grated cheese - gruyere is traditional but I used Parmesan this time - on top of each slice of bread.
6. Add 1 tbsp balsamic vinegar to the broth - I think this is the secret ingredient - to the pot.
7. Place the pot under the broiler on high for 5 minutes or until the cheese has melted and the bread has become golden brown and toasted.
8. Serve immediately and enjoy!

GREEK YOGURT BANANA PUDDING ????????
1. Whisk 1-2 cups heavy cream to soft peaks and set aside.
2. Add 4 cups Greek yogurt, 1 tbsp honey, 1 tsp vanilla extract, and 1 vanilla pudding mix packet to a large mixing bowl and combine well.
3. Add 2 sliced bananas to mixture and fold gently.
4. In a baking dish, spread pudding mixture across the bottom, covering the surface area to create the first layer.
5. Slice 1 more banana and layer on top of Greek yogurt mixture.
6. Spread whipped cream on top of banana layer.
7. Slice the last banana (4 total) and layer on top of whipped cream.
8. Add crushed graham crackers on top of whipped cream.
9. Place in refrigerator for at least 2 hour before serving.
10. Enjoy!

Garlic Soup Italian style with crispy croutons
I know what you’re thinking, two heads of garlic, are you crazy! You can relax as the slow cooking of the garlic will dissipate the pungent flavor and leave a pleasing smooth note. This soup really has to be served with croutons or a slice of bruschetta, plus some coarsely chopped parsley for that freshness. A simple soup with amazing flavor and fantastic if you have a cold!

Instant Pot Greek Lentil Soup

Ingredients
14 oz (400g) brown or green lentils, washed and soaked in water overnight
1/4 cup or more olive oil
2 carrots, peeled and diced
1 small onion, finely chopped
1 celery rib, diced
3-4 cloves of garlic, chopped
3 bay leaves
15 oz (425g) crushed tomatoes
1 teaspoon of salt or to taste
1/2 teaspoon crushed black pepper or to taste
1/4 teaspoon crushed red pepper flakes (optional)
8 cups vegetable broth or water
1 teaspoon dried oregano
2-3 tablespoons finely chopped fresh parsley
For serving: vinegar, olives, feta cheese
Instructions
Add the onion, carrots, celery, and olive oil to the Instant Pot and season with a pinch of salt. Set it to the Saute feature for about 10 minutes or until soft and golden. Add the garlic and sauté 2-3 minutes longer.
Add the lentils, bay leaves, water, salt, pepper, tomatoes, and crushed red pepper flakes.
Cover the instant Pot and set the valve to seal. Pressure cook on High for 10 minutes and allow it to slow release for 15 minutes. Open the valve to release any remaining pressure.
Taste and adjust the seasoning if needed. Add the oregano and stir to combine. Garnish with finely chopped parsley.
Serve drizzled with some good quality olive oil and a splash of vinegar and some feta with olives on the side.

Freezer Instructions: Once the soup cools to room temperature trasfer it to freezer-safe containers. The soup will keep fresh in the freezer for up to 3 months. Thaw it overnight in the refrigerator and warm on the stove.Music Used:

Grandma gave me a wonderful soup recipe! We eat and want more! A wonderful recipe for chicken soup that everyone, even children, will love. One bowl of this soup will not be enough and you will definitely want more. This chicken soup is very good for digestion and is very good to eat after the holidays to relieve the digestive system.
Recipe:
350 g chicken
1.5 liters of water
cook until done
remove foam
chop 2 onions
frying oil
fry the onion over medium heat
cut 1 carrot
fry over medium heat
add 1 spoon of broth
take the chicken out of the broth
leave to cool
cut 2-3 potatoes
after 3 minutes add 2 tablespoons of paste
add a few black peppercorns
add 3 bay leaves
cook until potatoes are cooked
add 1 cup frozen peas
beat 1 egg

This soup goes back to the Roman times and was seen as food for the poor as onions were cheap and in abundance. Today you still find it in fine dining establishments and is considered as the ultimate in comfort food, especially on cold Winter days.
