How To make Fresh Fruit Cake
FRUIT SAUCE:
1 1/2 c Orange juice
3/4 c Sugar
2 tb Cornstarch
1 ts Grated orange peel
1 ts Grated lemon peel
1/4 ts Salt (optional)
CAKE:
1 pk Angel food cake mix
3 Medium peaches
1 pt Strawberries
1 c Blueberries
About 2 hours before serving or early in the day: Prepare fruit sauce: In 2 qt saucepan over medium heat, mix orange juice, sugar, cornstarch, orange peel, lemon peel and salt. Cook over medium heat, stirring constantly, until mixture thickens and boils; boil 1 minute. Cover saucepan and refrigerate about 1 hour or until mixture is chilled. Meanwhile, preheat oven to 375~. Line 15 1/2 x 10 1/2 jelly-roll pan (I use my roasting pan) with waxed paper; grease paper. Prepare angel food cake mix as label directs, but spread batter evenly in prepared jelly-roll pan. Bake cake 20 minutes or until golden. Cover large wire rack with sheet of waxed paper. When cake is done, with small spatula, loosen it from sides of pan; invert onto waxed paper on rack. Lift off pan; peel off paper. Cool cake completely, then return to clean jelly-roll pan or large tray. Cover cake if not using right away. To serve: Spread top of cake with about half of chilled fruit sauce. Slice peaches and strawberries. Arrange peaches, strawberries, and blueberries on cake; brush fruit with remaining fruit sauce. This cake is absolutely delicious and looks very pretty with the different color fruit on top.

Recipe :
Fresh Fruit Cake
Preparation Time: 60 Minutes
Cooking Time: 10 Minutes
Serves: 4
Ingredients:
1 cup Flour
2 tbsp Cornflour
1 tsp Baking Powder
1 cup Sugar
1 cup Buttermilk
1/2 tsp Baking Soda
1 tsp Vanilla Essence
1/4 cup Oil
1 cup chopped Fruits
1 tbsp Water
1 tbsp Sugar
1/2 cup Water
2 tbsp Sugar
Method:
Sieve together the Flour, Baking powder, salt and set aside.
Mix together the butter milk and sugar till the sugar is completely dissolved.
Add the baking soda to the buttermilk mixture and allow to stand for 5 minutes till you see bubbles appearing.
Add the Vanilla essence to the butter milk mixture.
Mix the wet ingredients to the dry ingredients and mix to make a smooth consistent batter.
Add the oil to the batter and mix in.
Pour the batter into a prepared 7” mould and Microwave at High for 4 minutes. You can also bake it in a pre-heated oven at a temperature of 180C for 35-40 minutes till a skewer inserted in the middle comes out clean. You can also bake this in a pre-heated pressure cooker for the same time.
Cool the baked cake for 2 hours.
Chop the fruits into slices and into tit bits.
Cook the tit bits with a tbsp of water and 1 tbsp sugar on low heat for 7-8 minutes till fruits are soft.
Slice the cake into two layers.
Place the first layer of cake on the board.
Sprinkle the sugar syrup.
Cover with whipped cream and spread the sauce over it.
Place the second layer of cake and cover and sprinkle the sugar syrup.
Cover with whipped cream and arrange the sliced fruits over it.
Chill and Serve.

CAKE BATTER
Mixture 1:
5 egg yolks
1/2 cup granulated sugar
1/3 cup milk
1/4 cup vegetable oil
1 tsp vanilla extract
1 cup cake flour
1 tsp baking powder
Mixture 2: Meringue
5 egg whites
1/2 cup granulated sugar
FILLING
2 1/2 cups dice fruits of choice
WHIPPED CREAM FROSTING (double the ingredients below for 8” cake)
2 cups cold heavy whipping cream
1 cup confectioners sugar
1 Tbsp dry vanilla pudding mix
Piping tips: 1M and 789
Supplies: turn table, cake board, offset spatula, edge scraper, smoother comb, pipping bags, baking pan 8” x2, and parchment paper

눈에띄네 과일 생크림 케이크/ How to Make Fruits Cake.
이 번 레시피는 과일생크림 케이크 입니다.

이 케이크는 늘 만들고 싶었는데요, 망고가 있는 계절엔 딸기가 없고 딸기가 나오면 망고가 없거나 그렇더라구요..
하지만 이번에 집앞 마트에 망고가 뙇!! 약간 덜익은 망고라 집에 모셔와서 숙성 시킨 후 만들었어요. 흐흣 !
마스카포네 치즈와 생크림에 설탕 대신 화이트 초콜릿(깔리바우트)을 넣었어요.
그래서 맛이 그윽하다고 할까요... 은은한 단맛의 크림이 과일과 조화를 이루었답니다.
이 번에 사용한 무스틀을 특별 제작 하였어요. 보통은 스테인리스 무스링을 사용하지만
저는 투명 아크릴 파이프를 사용했어요. 만드는 동안 옆면에 과일이 잘 붙었는지
크림이 잘 들어갔는지 훤히 볼수 있어서 편리할 것 같아서 주문을 했답니다.
인터넷 아크릴 쇼핑몰에서 직경160mm,두께 3T,길이 10cm 인 아크릴 파이프를 구매한 후 7cm 높이로 잘라달라고 주문을 했어요. 가격은 7700원에 배송료 포함 대략 1만원 입니다.
보통 무스링보다 많이 비싸지만 만족도는 높아서 앞으로 계속 사용해 보려고 합니다.
얼려야 하는 무스케이크도 괜찮을지 한번 해보고 알려드릴게요.

그런데 제가 구입한 파이프는 사이트 설명에는 외경 160mm(⌀) 내경 154mm(⌀) 라고 되어있는데,
실제 받아보니 내경이 160mm 이었어요. 한편, 외경 150mm 내경 144mm 짜리는 동일했어요.
이 부분은 추후 문의를 좀 해보려고 합니다.
아참, 영상이 좀 길어서 케이크를 틀에서 분리하는 장면을 넣지 못했어요 깜빡잊기도 했고요.
아시겠지만, 일만 무스케이크 분리하는 방법과 같습니다.
저는 케이크 지름보다 작은 팬을 엎어놓고 그위에 올린 후 옆면의 랲만 아래로 벗깁니다.
그리고 무스링을 아래로 내려서 분리 합니다.
사실 이케이크는 무스띠를 안에 둘렀기 때문에 아크릴 링이 랲만 벗기면 바로 아래로 떨어지더군요.
아주 쉽게 분리돼요. ^^

Usually, I use a stainless steel mousse ring to make this type of cake.
But this time, I used a specially made acrylic mousse ring.
I can notice that if the fruits stick to the side of the ring during the making.
It was very convenient to see if my work went well.
I got the acrylic pipe from Internet Acrylic shopping mall
This pipe is 160mm in diameter, a thickness of 3mm and a length of 10cm and I ordered to cut it off to 7cm tall.

Oh, the video was a bit long, so I couldn't put a scene to remove the cake from the tube.
As you can see, it's the same way to remove ordinary mousse cake from the mousse ring.
I put the cake on top of a pan that is smaller than the cake, and then peel off the only side wrapping.
Then pull down the mousse ring and remove it.
In fact, since the ring has a mousse cake film inside, it slips straight down itself.
