How To make French Fried Sweet Potatoes
3 md Sweet Potatoes
1 c Crushed Corn Flakes
1 lg Egg
1 tb Water
Parboil sweet potatoes for about 10 minutes. Drain, peel and cut into strips. Mix egg with water and beat throughly. Seperate crushed corn flakes in two seperate bowls, making two 1/2 cups each. Flour may be substitued for one of the bowls of flakes. Dip the cut potatoes in the flour or crushed flakes, then in the egg mixture and then again in the other bowl of crushed flakes. Deep fry in oil (375 to 385 degrees) until browned. Drain on absorbent paper and sprinkle with salt. A mixture of cinnamon and sugar could also be used for a sweet tastse.

Baked Sweet Potato Fries + Tips to Make them Ultra Crispy!
Ultra Crispy Baked Sweet Potato Fries are going to soon become your new favorite side dish! Learn how easy it is to cut sweet potatoes into fries and then bake them in the oven instead of deep-frying. You can then serve this healthy, vegan, vegetarian, and gluten-free roasted vegetable with a side of homemade sriracha mayo for a show-stopping recipe the whole family will love!

INGREDIENTS:
2 lb. sweet potatoes medium-sized
1 Tbsp. cornstarch or tapioca starch
1 tsp. salt to taste
2 Tbsp. oil avocado or olive
¼-½ tsp. black pepper optional
Fresh parsley or cilantro finely chopped, optional
INSTRUCTIONS:
Preheat oven to 425°F.
Peel the skin from the potatoes using a vegetable peeler.
Cut each potato in half lengthwise.
Place one of the halves flat-side down on the cutting board and make cuts about ¼-inch apart.
Place these pieces flat-side down and finish cutting potatoes into long, thin strips about ¼-½ inch in thickness. Repeat with remaining sweet potatoes.
Add potato slices to a large baking sheet lined with a piece of parchment paper.
Sprinkle 1 tablespoon of starch over all of the potatoes. Toss until well coated.
Drizzle oil all over the potatoes and sprinkle with salt. Toss to combine.
Lay potato fries out in a single layer on the baking sheet, making sure they do not overlap. Bake sweet potato fries in preheated oven for 20 minutes.
Flip all fries over and return to oven for an additional 12-15 minutes. You’ll know the fries are done baking when the edges begin to brown and crisp up.
Serve sweet potato fries with a Homemade Remoulade Sauce or Sriracha Mayo and enjoy!

Baked Sweet Potato Fries
Here is what you'll need!
Ingredients:
2 large sweet potatoes
Water (for soaking)
2 Tbsp. corn starch
1 Tbsp. olive oil (or vegetable oil)
1/2 tsp pepper
1/2 tsp paprika
1/2 tsp garlic powder
1/2 tsp brown sugar
Salt (to taste)
Shredded parmesan (optional)
Chopped fresh parsley (optional)
Directions:
Rinse and peel sweet potatoes. To cut into fries, cut a small sliver off the edge of the potatoes lengthwise to create a flat side for them to rest on. Turn the potato over to lay on its flat side. Then cut lengthwise into 4-5 long slices (or 1/4-3/8 inch slices). Cut each slice lengthwise into 3-4 fries (1/4-3/8 inch).
Place the fries in a bowl of water and soak for 1 hour. (This helps remove excess starch from the potatoes so your fries will be crispier.)
Preheat the oven to 425°F / 220°C.
Rinse and dry off. In a large bowl or gallon bag, toss the fries with cornstarch until they’re evenly coated. Then add the oil and toss to coat. Add the pepper, paprika, garlic powder, and brown sugar and toss to evenly distribute your spices. (Hold off on adding the salt until after baking. This will help make sure the fries are crispy.)
Line a baking sheet with parchment paper or aluminum foil and spray with nonstick cooking spray. Lay out the french fries, being sure not to overcrowd the pan. (You may need two pans, depending on how large your pans are. Avoid overcrowding one pan or your fries may not crisp up.)
Bake for 15 minutes. Flip fries with tongs, then bake for an additional 10-15 minutes.
Sprinkle on salt (to taste) and serve! Add shredded parmesan and chopped parsley for an optional garnish. Enjoy with your favorite dipping sauce!
