How To make Fettucine Asparagus with Shiitake & Smoked Bacon
6 oz Smoked bacon or pancetta,
-cut into 1/2" dice 4 tb Olive oil
6 oz Fresh shiitake mushrooms,
-sliced 1 lb Asparagus, cut into 2" piece
12 oz Fresh fettucine
1 tb Fresh thyme, finely chopped
2 tb Fresh oregano, finely
-chopped Salt to taste Pepper to taste (Recipe is from Diane Pariseau of Triology Restaurant, St. Helena, Calif.) Saute bacon in skillet until crisp, remove to a plate. Drain off excess fat, then add olive oil to the skillet and cook the mushrooms until softened. Lightly blanch the asparagus. Cook the pasta briefly in boiling salted water. Drain the noodles and toos with the asparagus, bacon, shiitake and fresh herbs. Season with salt and pepper. Nutritional analysis per serving: 667.4 calories; 35 grams total fat; (9.9 grams saturated fat); 27.7 grams protein; 56.8 grams carbohydrates; 175.5 milligrams cholesterol; 709.7 milligrams sodium.

Samphire is often associated with fish, as it naturally grows on the seashore, in estuaries or marshland, but there’s no reason why vegetarians can’t enjoy its salty sweetness. It pairs well with new potatoes and herbs; we’ve used aromatic basil and punchy chives. Season the dish carefully with any extra salt, as samphire has quite a salty taste. Resting the frittata for a few minutes will allow it to set properly, making slicing it easier; egg dishes like this are always better warm rather than piping hot.

Ingredients:-
2 tbsp olive oil
4-5 cloves garlic
A packet of pasta
1 onion
1 tsp dried thyme
1 tsp dried mixed Italian herbs
1 tsp black pepper
1/2 kg chicken thigh
200 grams of mushrooms
150 ml cream
Parsley to garnish
Salt to taste
Method:-
- In a saucepan heat Olive Oil and saute garlic, onion, thyme with italian herbs, black pepper and salt.
- Add the chicken and cook for 7 minutes.
- Then add mushrooms and cook until the mushrooms release liquids.
- Pour the cream in batches as required and stir.
- Now add coriander and mix well.
Delicious and Creamy Chicken and Mushroom Pasta is ready to serve!
