How To make Crescent Mexican Cookies
1 3/4 c. flour -- (1 3/4 to 2)
1 Pinch salt
1/2 cup confectioners' sugar
1 cup softened butter
1 cup crushed pecan meats
1 teaspoon vanilla
Mix together and shape into balls or crescents or rings. Bake 10 to 15 minutes at 325 degrees. Makes about 3 dozen.

These little snow ball cookies are a must make for your holiday baking. I make these almost every Christmas and they make a wonderful dessert anytime of year.
Mexican wedding cookies can be made gluten free by using a gluten free flour, which I have done many times and works out great.
It's important to roast the pecans for that rich flavor. Then either chop them up very fine or place them in a food processor.
I used a kitchen aid mixer to mix my dough but you could use a regular hand mixer to get the job done too.
After all the ingredients are combined you want to refrigerate the dough. Cover it with saran wrap or what ever you have and chill for at least 30 minutes to an hour.
Preheat your oven to 350 degrees F.
Roll the dough into 1 inch size balls and place on parchment paper or or a greased cookie sheet. Space them about 2 inches apart. They don't spread out much.
Bake the little pecan balls for about 15 minutes or until they are golden brown. Place the cookies on a cooling rack for a few minutes.
Roll the cookies in powdered sugar one or two at a time and place them on another cooling rack that is over a plate. Once all the cookies covered, place some powdered suger in a fine strainer and shake more powdered sugar over the cookies to get a nice even coating of sugar.
Now go ahead and try one! Yummy!

Pecan Sandies are a super easy, must make for the holidays and require only a few ingredients. They are also known as Mexican wedding cookies. No matter what you call them they are simply delicious!

✅Ingredients
• 1 cup butter
• 1/3 cup granulated sugar
• 2 teaspoons water
• 2 teaspoons vanilla extract
• 2 cups all-purpose flour
• 1 cup chopped pecans
• 3 tablespoons powdered sugar, for rolling
✅Instructions

1️⃣ 00:00:11 - In a large mixing bowl, cream together butter and sugar until fluffy. Beat in water and vanilla.
2️⃣ 00:00:41 - Stir in flour and pecans until well combined. Shape dough into 1-inch balls. Place at least 2 inches apart onto two lightly greased or parchment-lined baking sheets.
3️⃣ 00:01:19 - Place shaped cookies into the fridge for 30 minutes while the oven preheats to 325 degrees Fahrenheit.
4️⃣ 00:01:49 - Bake in the preheated oven for 18 to 20 minutes until lightly golden. Remove from oven and let cool completely on the baking sheet.
5️⃣ 00:02:04 - Roll cooled cookies in powdered sugar*. Store in an airtight container.
NOTES
*One alternative is to roll your cookies in powdered sugar while still warm. The powdered sugar will melt slightly and create a different effect on the cookie. Try both and see which you like best! Either way is delicious.
