Russian tea cakes are simple buttery cookies packed with chopped nuts for a great crunch and depth of flavor. The cookies are not super-sweet so the powdered sugar on the outside actually provides the perfect balance. Mexican Wedding Cakes are a melt-in-your mouth shortbread cookie that goes by many names; a Russian Tea Cake, an Italian Butter Nut, a Southern Pecan Butterball, a Snowdrop, a Viennese Sugar Ball and a Snowball. They are very popular, not only during the Christmas season, but also at weddings, christenings, and other festive occasions. Looking at these cookies you could mistake them for Melting Moments, as the only difference between the two is that Mexican Wedding Cakes contain ground nuts (either ground pecans, hazelnuts, almonds, or walnuts).

Easy Pecan Sandies (Mexican Wedding Cookies)
Pecan Sandies are a super easy, must make for the holidays and require only a few ingredients. They are also known as Mexican wedding cookies. No matter what you call them they are simply delicious!

✅Ingredients
• 1 cup butter
• 1/3 cup granulated sugar
• 2 teaspoons water
• 2 teaspoons vanilla extract
• 2 cups all-purpose flour
• 1 cup chopped pecans
• 3 tablespoons powdered sugar, for rolling
✅Instructions
00:00:48 - What pecan sandies dough should look like
1️⃣ 00:00:11 - In a large mixing bowl, cream together butter and sugar until fluffy. Beat in water and vanilla.
2️⃣ 00:00:41 - Stir in flour and pecans until well combined. Shape dough into 1-inch balls. Place at least 2 inches apart onto two lightly greased or parchment-lined baking sheets.
3️⃣ 00:01:19 - Place shaped cookies into the fridge for 30 minutes while the oven preheats to 325 degrees Fahrenheit.
4️⃣ 00:01:49 - Bake in the preheated oven for 18 to 20 minutes until lightly golden. Remove from oven and let cool completely on the baking sheet.
5️⃣ 00:02:04 - Roll cooled cookies in powdered sugar*. Store in an airtight container.
NOTES
*One alternative is to roll your cookies in powdered sugar while still warm. The powdered sugar will melt slightly and create a different effect on the cookie. Try both and see which you like best! Either way is delicious.

Mexican Wedding Cookies Recipe -- How to Make Mexican Wedding Cookies with Pecans
Hey Chile-Heads, and Happy Holidays! Today, I'm sharing with you a classic holiday recipe: Mexican Wedding Cookies with Pecans. Baking cookies during this season is one of my favorite activities, and these are my absolute favorite cookies to make. Using just a few key ingredients, they come together so easily and are sure to be a hit with your family and friends. Just a quick note on the video: When I added the butter, I added 2 cups, rather than the 1 cup in the stated in the video. This is because I doubled the recipe. Apologies for not making that clear in the video.

Mexican Wedding Cookies
Ingredients:
1 cup butter at room temperature, softened
½ cup powdered sugar
1 teaspoon vanilla
2 ¼ cup sifted flour
¼ teaspoon salt
¾ cup chopped pecans, you can also use walnuts
Directions:
Using a hand mixer cream together butter and powdered sugar until it is light and fluffy, then stir in vanilla. Whisk together the flour and salt. Gradually add the flour mixture to the butter and sugar mixture, then stir in chopped nuts. If the mix is too soft, chill in the refrigerator for a few minutes. Form dough into 1 inch balls and place onto parchment paper atop a baking sheet. Bake at 400 for 10 - 12 minutes, or until the cookies start to turn light golden brown. Allow them to cool slightly. They should be almost room temperature. Roll them in powdered sugar until completely, and evenly coated. Allow the cookies to cool completely. You may want to roll the cookies a second time once they have cooled to room temperature. Enjoy!
