RECIPE
Ingredients:
1 cup bittersweet chocolate chunks
1 3/4 cups heavy cream, chilled
3 large egg whites
1/4 cup sugar
Bittersweet chocolate, shaved, for garnish
Steps:
1. Temper chocolate, stirring until melted. Turn off the heat and let stand.
2. Beat heavy cream until it forms soft peaks. Set aside.
3. Whip egg whites with a hand mixer until soft peaks form, gradually adding in sugar.
4. Using a whisk, fold the tempered chocolate into the egg whites. Once fully incorporated, fold in the whipped cream. Transfer to a baking dish if desired, cover and refrigerate until set (about 1 hour).
5. Serve with shaved chocolate and enjoy!

Rum and Hazelnut Mousse Cake
June 1st is National Hazelnut Cake Day
Oddly enough, there isn't actually any information about how Hazelnut Cake Day came to be, but that doesn't mean we can't celebrate the day with something sweet!
Hazelnuts, also referred to as Filberts, come from the Hazel Tree, native to the Northern hemisphere. They are a buttery nut and have a mild sweetness that makes them perfect for use in baking. Hazelnuts also pair very well with chocolate, coffee and ice cream.
I've chosen to put a personal spin on it and make a Rum & Hazelnut Mousse Cake.

It's make with dark chocolate and I add a bit of dark rum to make it even better ???? If you are a chocoholic like me, you have to try this recipe, you will love it!

Chocolate Mousse Recipe
Chocolate Mousse - an elegant, smooth, airy and chocolaty dessert. This is a dessert served in many restaurants and may seem complicated or sophisticated. Don't be afraid to give this chocolate mousse a try, it's not difficult at all. Actually it's quite easy and will surely impress your guests.
Ingredients:
Makes 2-3 servings
5.5 oz (150 g) dark chocolate
3 eggs, separated
3 tbsp (50g) butter
1/4 cup (50g) sugar
flavors - you choose (rum, orange, zest, lemon zest, mint, etc)
Directions
1. Melt chocolate over a bain-marie until smooth. Add butter and incorporate until well blended.
2. Whip egg whites until foamy with a mixer and gradually add the sugar whipping the whole time until it holds very stiff peaks.
3. Beat the yolks with your chosen flavor ingredients, add to chocolate mixture.
4. Fold in a spoonful of the whites into chocolate mixture then pour chocolate into the remaining whites and fold gently until well combined.
5. Pour the mousse into serving bowls. Wrap with plastic and refrigerate few hours or overnight. Decorate if desired before serving.

Rich chocolate mousse w/Kaluah, Rum & Coconut cream

Ingredients for mousse
-3 eggs (Separate)
-120g dark chocolate (Prefer 65%-75% cacao)
-1/2 tsp and 1/4 tsp (3g) gelatin
-1 1/2TBS water
-80ml heavy cream
-20g sugar
-1 tsp Cointreau
For topping
-100ml heavy cream
-Liquor you like (Used Kaluah, Rum, Coconut)
How to:
1:Separate eggs into 2 clean bowls
2:Break chocolate into small pieces. Put them in a bowl and melt it over hot water. Once all the chocolate melted, set aside and cool off.
3:In a small cup, mix gelatin with measured water. Set aside.
4:Whip heavy cream till soft peak
5:Into melted chocolate, mix egg yolks, one yolk at a time, whipped cream, cointreau, and melted gelatin(heat in a microwave for 20 sec).
6; Add sugar into egg whites. Whisk well till stiff peak. Add to the chocolate mixture, 1/3 at a time.
7: Pour into a serving bowl and chill in a fridge till serve.
