Melt chocolate chips in water over over a low heat. When melted, remove from heat and stir in rum. Separate eggs and beat chocolate mixture into yolks. Beat whites separately and fold in. Pour into 4oz custard cups or pots and chill in refrigerator for at least 4 hours before serving. Smooth, fluffy chocolate mousse; it just doesn't get much better than this! In this video we show you how to make this wonderful treat.
Ingredients for 8 portions
200 g good-quality dark chocolate (70% cocoa solids)
100 g butter
2 very fresh eggs
2 very fresh egg yolks
3 tablespoons sugar
3 tablespoons rum
250 g whipped cream
Preparation
For the mousse break chocolate into pieces and melt slowly, together with the butter, over a bowl of hot water.
Separate eggs. Beat all egg yolks and the sugar with the whisks of the hand whisk for at least 5 minutes until light and creamy. Stir in the rum. Whisk the melted mixture of chocolate and butter.
Beat the egg whites until stiff. Beat the cream until stiff. Fold both into the chocolate cream using a whisk as soon as possible, so that no more flecks of cream or egg white foam can be seen. Place mousse into small bowls and refrigerate immediately.

Ingredients:
200 grm Chocolate
3/4 cup Cream
8 Oreo Cookies
1 & 1/2 tsp Melted Butter
3/4 tsp Gelatin
2 tbsp Water
1 tbsp Caramel Syrup
1 cup Whipped Cream
Method:
- In a bowl put dark chocolate and cream and microwave it
- Whisk the melted chocolate and cream and let it cool
- Grind the oreo cookies into a fine powder
- Add melted butter to oreo cookie powder and mix it well
- Make a thin layer in the base of the serving glass and refrigerate it for few mins.
- Soak Gelatin in water for at least 5 mins and add it to the chocolate mixture
- Add caramel Syrup and whisk it and refrigerate it for about 10 mins
- Add whipped cream to the chocolate mix and mix it well with a spatula
- Pour the chocolate mousse onto the oreo cookie base serving glass
- Set for another 15 mins in freezer
- Garnish it with whipped cream, chocolate piece and oreo cookie on top and the dessert is ready to be served.

Ingredients:
Dark chocolate mousse:
115g (4oz) Dark chocolate
1 cup Heavy cream, divided
Milk chocolate mousse:
115g (4oz) Milk chocolate
1 cup Heavy cream, divided
White chocolate mousse:
115g (4oz) White chocolate
1 cup Heavy cream, divided
Directions:
1. Chop each chocolate into small pieces and place in separate bowls. To each bowl add 1/4 cup (60ml) heavy cream.
2. Melt each chocolate (one at the time) over a double boiler. Then set aside and let cool to room temperature.
3. When all melted chocolate has chilled, start whipping the cream, whip to whip to soft-medium peaks.
4. Fold 1/3 of the whipped cream into each chocolate mixture. Whip until combined and no streaks remain.
5. Transfer each mousse to a piping bag.
6. Pipe first mousse into your serving dish, refrigerate for 10-15 minutes. Then pipe the second mousse, refrigerate for 10-15 minutes. Then pipe the third mousse and refrigerate for at least 3 hours.
Notes:
• There are 2 options to whip the cream: 1. Whip all the cream (540ml) at once, then divide it into 3 equal parts. 2. Divide into 3 (180ml), then whipping each portion, this option is more precise.
