Cold, fresh, sweet and sour - so refreshing and delicious. This time I made it with a special cucumber twist, to compensate for lack of dill. Cheers!

Cucumber Soup with croutons (cold soup) | Chłodnik z Ogórka z grzankami
The inspiration for this Cold Polish Cucumber soup with croutons in Polish Chłodnik z Ogórka z grzankami came to me thanks to my amazing friends. In this video I use home grown vegetables that I got from my friends to make this refreshing, fulfilling soup.
Soup is full of home grown cucumbers, zucchini, and peppers, with a lot of polish flavors like chives, dill, radishes. To add some texture and flavor I also show you how to make your own croutons.
INGREDIENTS
Soup:
2 cloves of garlic (chopped)
fresh dill (chopped)
fresh scallions (chopped)
fresh chives (chopped)
3 radishes (finely slices for garnish)
1 small chili pepper (chopped, 1/2 goes into the soup)
1 small cubanella pepper (chopped)
1 cucumber (grated)
1 zucchini (grated)
1 yellow squash (grated)
1 cup of greek yogurt
2 cups of kefir
salt & pepper
Croutons:
2 slices of bread of you choice (chopped 1 inch) here I use spelt bread
1/2 chili pepper
salt & pepper
olive oil
cayenne pepper

The Original Cold Beetroot Soup
The cold beetroot soup is one of the favorite Eastern European meals during summer. Mikhail even managed to impress a lady using it.
Product list that Mikhail used:
1 litre of homemade yoghurt
1 long cucumber
a few of spring onions
4 eggs
salt
peper
It is recommended to add a few branches of dill too.

VEGAN Šaltibarščiai ???? Lithuanian cold beet soup, also called Lithuanian gazpacho
It’s official spring, temperatures are rising and we all need fresher food during these warmer days.
Here’s why I decided to make this vegan Šaltibarščiai, a Lithuanian cold beet soup, also called Lithuanian gazpacho.
It’s so delicious, filling, and super easy and quick to make!
Ingredients:
160 g pickled beetroots
160 g cucumber
10 g spring onions
4 g fresh dill
200 ml unsweetened soy milk
200 g unsweetened soy yogurt
2.5 tablespoons fresh lemon juice
1/2 teaspoon black pepper
1/2 teaspoon salt
Method
Grate the pickled beetroots, I recommend using gloves, because beetroots stain
Cut cucumbers into small pieces, chop spring onions, and dill.
Combine unsweetened soy milk, soy yogurt, lemon juice, salt, and black pepper, and add all the veggies previously cut.
Garnish with some extra dill and spring onions and serve with boiled or roasted potatoes!
