How To make Chilled Beet and Cucumber Soup
1 1/2 Lb. cooked beets
peeled
2 Large cucumbers :
peeled, halved
lengthwise 2 Bunches spring onions (white and green part)
4 Tbsp. chopped parsley
4 oranges
2 Tbsp. red wine vinegar
3 C. or more chicken stock -- chilled
salt and freshly ground black pepper to taste dollop salted whipped cream or sour cream per serving
Steam or gently boil the beets about 15 minutes. When done, grate them on the coarse side of a grater. Remove the seeds from the cucumbers. Grate on the coarse side of the grater. Chop the green onions. Juice the oranges and grate the rind of 3 oranges. Put the beets, cucumbers, orange rind and juice and 2 cups cold chicken stock into a large mixing bowl. Puree in a blender, in batches, until smooth. Chill for at least 3 hours before serving. Add more chicken stock to correct the consistency after chilling. To serve, ladle into chilled soup bowls. Garnish with salted whipped cream or sour cream.

Hello! I brought simple cucumber recipe that goes good with rice and side dishes in summer season. The cucumber, which provides moisture during the sweaty summer season, are not only good for lower your body temperature, but also good for your bone health and they have a lot of minerals and contains antioxidant.

[Ingredients]
Solid ingredients : 1/3 of cucumber, 5g of dried seaweed(soak it in water for 10 minutes before cook), 50g of beetroot, 1 chili, spring onion
Ingredients for soup : 50g of soybean paste, 1T of soy sauce, 1T of vinegar, a peace of garlic, 600ml of water, 2t of sesame

[Instruction]
1. Chop all the ingredients.
2. Dissolve soybean paste in water and add beetroot.
3. Put rest of ingredients in a bowl and add ice cube.

Cucumber Cold Soup | ककड़ी का ठंडा सूप | NEWTRP
ककड़ी का ठंडा सूप को बनाना काफी आसान है। यह गर्मी के दिनों में बेहद फायदेमंद होता है। यह भूख बढ़ाने में मदद करता है। खीरा और शिमला मिर्च इसकी पौष्टिकता और बढ़ा देते हैं। तो आइए बनाते हैं कोल्ड कुकम्बर सूप।

5 लोगों के लिए आवश्यक सामग्री
दो कप खीरे क्यूबिक साइज में कटे हुए
½ कप बारीक कटा हुआ खीरा
¼ कप दही
दो चम्मच मक्खन
एक चम्मच कटी हुई शिमला मिर्च
नमक स्वादानुसार
सजाने के लिये
पुदीने की पत्तियां
काली मिर्च स्वादानुसार
विधि
एक पैन में 1 ½ कप पानी लेकर खीरे को उबाल लें। खीरे जब नरम हो जाएं तो इसे ठंडा करने के लिए रख दें।
अब इन बॉयल्ड खीरों को मिक्सी में डालकर दूध और दही डालें। साथ में थोड़ा सा नमक डालें और इसे मिक्सी में चलाएं।
अब पैन में मक्खन को पिघला लें। बारीक कटे हुए खीरे और शिमला मिर्च को इसमें डालें और दो मिनट के लिए फ्राइ करें।
अब मिक्सी में बने हुए सूप को इसमें मिला दें। इसे दो मिनट तक पकाएं। इसके बाद इसे थोड़ा ठंडा होने दें और 30 मिनट के लिए फ्रीज में रख लें। लीजिए तैयार है हमारा कुकम्बर सूप। इसे पुदीने की पत्तियां और काली से सजाकर सर्व करें।

- sour cream to taste
- kefir
- cold water
- salt to taste
For one pers:
- beet 2 tablespoons
- chopped cucumber 2 tablespoons
- chopped dill 1 tablespoon
- chopped green onion 1 tablespoon
- chopped eggs 1 tablespoon
- sour cream 1 tablespoon
- kefir 50ml (1.7ounce)
- cold water 50ml (1.7ounce)
- salt to taste
- potatoes to taste in a separate bowl
???? Gazpacho 800ml (28 ounce)
- ripe tomatoes 1 kg (2.2 lb)
- bell pepper 300g (0.6 lb)
- cilantro or basil 30g (1 ounce)
- wine vinegar 1 tablespoon
- onion 1/2 pcs
- garlic 2 cloves
- dry herbs to taste
- salt to taste
- bread 2 slices
- tomato juice 200ml (7 ounce)
- black pepper to taste

VEGAN Šaltibarščiai ???? Lithuanian cold beet soup, also called Lithuanian gazpacho
It’s official spring, temperatures are rising and we all need fresher food during these warmer days.
Here’s why I decided to make this vegan Šaltibarščiai, a Lithuanian cold beet soup, also called Lithuanian gazpacho.
It’s so delicious, filling, and super easy and quick to make!
Ingredients:
160 g pickled beetroots
160 g cucumber
10 g spring onions
4 g fresh dill
200 ml unsweetened soy milk
200 g unsweetened soy yogurt
2.5 tablespoons fresh lemon juice
1/2 teaspoon black pepper
1/2 teaspoon salt
Method
Grate the pickled beetroots, I recommend using gloves, because beetroots stain
Cut cucumbers into small pieces, chop spring onions, and dill.
Combine unsweetened soy milk, soy yogurt, lemon juice, salt, and black pepper, and add all the veggies previously cut.
Garnish with some extra dill and spring onions and serve with boiled or roasted potatoes!
