How To make Chicken Wild Rice Dish
1/2 lb mushrooms
fresh, sliced
1 c celery :
chopped
1 c sweet red pepper chopped
2/3 c green onions :
chopped
2 ea garlic cloves minced
1/3 c saute Butter, Mrs. Bateman's Butterlike(tm
2 ea chicken bouillon cube
2 c water
1 1/2 qt cooked chicken :
cubed
1 qt cooked wild rice
1 qt cooked long-grain brown rice
1/2 lb cheddar cheese, lowfat -- shredded
2 1/4 tsp salt
1 1/2 tsp dried basil
1/2 tsp pepper
In a kettle, saute the first five ingredients in the butter substitute until tender. Add remaining ingredients and mix well. Spoon into a greased 13 x 9" baking dish. Cover and bake at 350 F. for 75 minutes. Uncover and bake for 15 minutes longer or until heated through.
This dish may be assembled and refrigerated overnight. Remove from the refrigerator 1 hour before baking.

Check Out Those Thighs! | Chicken & Mushroom Wild Rice Skillet Dinner
INGREDIENTS:
5-6 bone in skin on chicken thighs- cleaned and seasoned with salt & pepper
1 medium diced onion
2 stalks diced celery
1 8oz. packed diced mushrooms
3 cloves minced garlic
1 package long grain & wild rice mix
2 cups chicken broth
1 can cream of chicken
1/4 cup fresh chopped parsley
salt and black pepper
2-3 Tbsp. oil
In an oven proof skillet on medium high heat add oil and place chicken skin side
down. Season both sides with salt and pepper.
Cook for 3-4 minutes or until skin is golden brown and then flip.
Cook for an additional 1-2 minutes and then remove from the pan.
On med heat add onions and celery. Cook and stir for a couple minutes.
Add mushrooms. Cook and stir for another 3-4 minutes.
Add garlic, stir and cook for 30 seconds.
Add rice. Cook and stir for 1 minute.
Add broth and stir to incorporate.
Add seasoning packet, fresh parsley and any other herbs.
Add cream of chicken and stir to incorporate. Bring to simmer and turn off heat.
Place chicken skin side up and all the juices.
Cover tightly and bake at 400 degrees for 30 minutes.
Remove from oven and do not take off the lid. Let rest another 15 minutes.
Serve and enjoy.

Creamy Chicken Wild Rice Soup ~Leftover Chicken Recipe
INGREDIENTS
2 cups cooked shredded chicken
6 cups chicken broth
2 cups milk / half and half
1/2 cup wild rice
4 tbsp. butter
1/4 cup flour
1 cup diced onions
1 cup diced celery
1 cup diced carrots
1 cup sliced mushrooms
1 tbsp. minced garlic
1 tsp. Italian seasonings
1 tsp. poultry seasoning
1 bay leaf
fresh chopped parsley
salt and black pepper
olive oil
Rinse the wild rice thoroughly with water, drain
and set to the side.
In a soup pot add some oil, onions, celery, carrots,
mushrooms, salt and pepper. Stir and cook for
5 minutes.
Add minced garlic, parsley, Italian seasonings and
poultry seasoning. Stir and cook for 30 seconds and
then add chicken broth.
Add wild rice and bay leaf. Stir and bring up to a
simmer, cover and cook for 45 minutes.
In a medium sauce pan add butter and flour.
Stir and cook for 1-2 minutes and slowly add milk.
Stir and bring up to heat and sauce will thicken in
3-5 minutes.
Add roux to soup and stir. Check for seasonings.
Bring up to simmer, cover and cook for 10 minutes.
Add shredded cooked chicken and some more fresh chopped
parsley. Stir and heat chicken through.
Ready to serve.
Enjoy.

6 to 8 tablespoons of butter
1/4 chopped onion

1 Cup sliced carrots
1 cup diced celery
1/2 cup all-purpose flour
32 oz chicken broth
2 cups water
16 oz half and half
1 box Rice-A-Roni Wild rice (It is not a soup. Don't know why I said that in this video)
1 teaspoon turmeric (optional)
2 cups of chopped cooked chicken (1 breast)

3 to 4 cups cooked and shredded chicken
1 box Uncle Ben's original wild rice prepared
1 med onion Chopped
1 4oz jar pimento
2 cans green beans drained
1 can cream of mushroom soup
1 cup mayo
1 cup shredded cheese
mix all together and pour in Casserole dish. bake at 300° for 30 minutes
