How To make Chicken Salad Tea Sandwiches with Smoked Almonds
Ingredients

chicken broth, or water

each
chicken breasts, boneless, skinless
1

mayonnaise
1/3
cup
shallot, minced
1
teaspoon
tarragon, fresh, minced

white bread, homemade, slices, very thin
1/2
cup
almonds, smoked, finely chopped
Directions:
In a deep skillet bring broth or water to a boil and add chicken breasts in one layer. Reduce heat and poach chicken at a bare simmer, turning once, 7 minutes. Remove skillet from heat and cool chicken in cooking liquid 20 minutes. Discard skin and shred chicken fine.
In a bowl, stir together chicken, 1/2 c of mayonnaise, shallot, tarragon, and salt and pepper to taste.
Make 12 sandwiches with chicken salad and bread, pressing together gently. With a 2 inch round cutter cut 2 rounds from each sandwich.
Put almonds on a small plate and spread edges of rounds with remaining 1/2 c mayonnaise to coat well. Roll edges in almonds.
Sandwiches may be made two hours ahead, wrapped in plastic wrap, and chilled.

Coronation Chicken | Homemade Version of the British Classic!
Coronation Chicken Salad is a British classic! A scrumptious combination of cold cooked chicken, dried apricots, toasted almonds and spring onions in a curry flavoured creamy dressing. Here is my version that will surely please everyone who is into delicious food!
Coronation Chicken Salad is an absolute staple when it comes to British lunches but it remains relatively unknown outside of the British Isles. I have never heard of it until we moved to London years ago.
In this version of a Coronation Chicken recipe, I kept the integrity of the classic by keeping it a cold chicken salad in a creamy curry flavoured dressing. But I replaced sultanas with apricots, added rocket (arugula), spring onions, fresh coriander (cilantro) and black sesame seeds. You can use Nigella seeds as well.
Pro trip: using a pre-cooked rotisserie chicken makes this salad a snap to put together!
INGREDIENTS
For the Salad
1.5lbs/3 cups cooked chicken
2 tbsp spring/green onions sliced
10 dried apricots chopped
2 tbsp sliced almonds toasted
3 tbsp fresh coriander/cilantro chopped
50g/2 cups rocket/arugula
1 tbsp black sesame seeds or nigella seeds
salt to taste
For the salad dressing
80ml/1/3 cup plain yogurt
60ml/1/4 cup mayonnaise
1 tsp curry powder fresh and good quality
1 tbsp mango chutney
½ tsp smoked paprika
1 tbsp lemon juice

It’s a Chick’n Salad Sandwich kind of day ???? This recipe is super simple, flavorful, filling, and makes about 5-6 servings!
Ingredients:
1 package Sweet Earth Mindful Chick’n, chopped @SweetEarthFoods
1 can or 2 cups cooked chickpeas, drained
1/3 cup diced celery
1/2 cup diced red onion
1 garlic clove, grated
1/4 cup slivered almonds, chopped
1/2 cup vegan mayo
1/2 tbsp yellow mustard
1 tbsp red wine vinegar
1/2 tbsp dried or fresh dill
1 tbsp pure cane sugar
1/2 tsp garlic powder
1/4 tsp onion powder
1/4 tsp creole seasoning
1/8 tsp coarse ground pepper
1/8 tsp smoked paprika
1/8 tsp cayenne pepper
Red pepper flakes to taste/heat level
Vegan bread of your choice
Toppings of your choice
Condiments of your choice
Chips of your choice
Steps
1. Add diced red onion and celery to a small bowl. Chop almonds and add to the bowl. Use a microplane to grate the garlic in the bowl. Set aside.
2. Add chickpeas to a large bowl. Mash about 1/2 of the chickpeas with a fork or your hands. Leave the other 1/2 whole. Add chopped chick’n. Add onion, celery, garlic, and almonds. Mix together.
3. Use the small bowl to make the dressing. Add mayo, mustard, vinegar, and all seasonings. Mix completely. Taste and add any extra seasonings to taste.
4. Add dressing to chick’n and chickpea mixture and mix thoroughly.
5. Toast two pieces of bread. Add chick’n salad and condiments/toppings of your choice. Serve with chips of your choice

Afternoon tea is quintessentially British. Enjoy, as I share the history and etiquette of afternoon tea including some of the Royal Family's favorite dishes at a college sorority house. Milk first or last? What's the Queen's favorite tea cake?
I also demonstrate the delicious CORONATION CHICKEN that was created to celebrate the Coronation of Queen Elizabeth II in 1953 and the recipe that I used to prepare at Buckingham Palace when it was on the menu. A fabulous twist on chicken salad perfect in a sandwich, for a light lunch with rice salad or piled onto a baked potato.

CORONATION CHICKEN RECIPE
4 cooked chicken breasts
1 cup mayonnaise
¼ cup heavy cream
1 TBS curry powder (or to taste)
1/2 cup diced red pepper
1/2 cup diced red onion
1/4 cup diced ripe pineapple
1/4 cup diced apricots
salt and pepper to taste
In a large bowl combine all of the sauce ingredients and mix well. Cut the chicken into bite size pieces and fold into the sauce mix. Spoon into a large serving bowl.
