How To make Chess Pie
3 eggs
1 cup sugar
1 cup brown sugar
1/2 cup butter -- melted
1 teaspoon vanilla extract
2 tablespoons all-purpose flour
1/2 teaspoon salt
1 cup light cream
1 batch pie pastry
Beat eggs until light and lemon colored. Gradually beat in sugars and melted butter. Beat until fluffy. Beat in vanilla, flour, and salt. Stir in cream and mix well. Line pie pan with pastry, crimping edges decoratively. Pour filling into pie shell. Bake at 400 degrees for ten minutes. Reduce oven temperature to 300 degrees. Bake 25-30 minutes longer, until filling is set.

Southern Classic Chess Pie
Ingredients:
1 Deep Dish Pie Crust
1 Stick of unsalted Butter (room temperture)
4 Eggs
1 1/2 Cups of Sugar
2 Tablespoons All Purpose Flour
1 Tablespoon of Yellow Cornmeal
1/4 Teaspoon Salt
1 Tablespoon of White Vinegar or Lemon Juice
1 Teaspoon of Vanilla Extract
1/4 Cup of Whole or Evaporated Milk
Bake @350 for 55 minutes. Cool Completely before serving or placing in a refrigerator.

???? True 'Old South' Buttermilk Chess Pie
A cross between an Old Fashioned Southern Buttermilk Pie, and a Southern Chess Pie.. It's all South and full of flavour!
Ingredients:
450g (2 ¼ cups) sugar
30 mL (2 Tbsp) cornmeal
45 mL (3 Tbsp) all purpose flour
175 mL (¾ cup) butter, melted
175 mL (¾ cup) buttermilk
6 large egs
15 mL (1 Tbsp) pure vanilla extract
Zest from one lemon
Juice of ½ of a lemon
1 9½” deep dish unbaked pie shell
Method
Preheat oven to 190ºC (375ºF).
Whisk together the sugar, cornmeal, and flour.
Beat the eggs into the sugar mix.
To that add the butter, buttermilk, and vanilla & mix.
Stir in lemon zest and juice.
Pour mixture into the pie shell.
Bake at 375ºF for 40-45 minutes until golden brown and set.

This classic Chess Pie recipe is a sweet custard pie made with eggs, sugar, milk, flour, cornmeal and citrus. It was originally made popular in the South and there are many variations of it, as its ingredients are easy to adapt to use what you have on hand.

▢ 1/2 cup butter, softened
▢ 2 cups granulated sugar
▢ 1 Tablespoon all-purpose flour
▢ 1 Tablespoon cornmeal
▢ 5 large or extra-large eggs
▢ 1 cup milk or buttermilk
▢ 1 teaspoon vanilla extract
▢ 2 Tablespoons fresh squeezed lemon juice
▢ 1 teaspoon lemon zest
▢ Dough for one pie crust
???? Instructions ????
In a medium mixing bowl, cream the butter and sugar. Beat in the flour and cornmeal.
Add the eggs, one at a time, beating well after each. When the egg mixture is well beaten add the milk, vanilla, lemon juice and zest beat until smooth.
Add pie crust to 9’’ pie plate and crimp the edges. Pour in filling.
Bake at 350 degreed F for 55-60 minutes. Check the pie after 30 minutes and place a piece of aluminum foil on top to keep it from getting too brown.
Allow to cool for one hour before serving.
