Make Overs Not Left Overs
Chicken Salad
Ingredients:
2 cups shredded rotisserie chicken
¼ cup chopped celery
½ cup chopped onions
½ cup pickles of your choice, chopped
1 teaspoon dijon type mustard
¾ cup mayo
1 tablespoon pickle juice
House Blend to taste *recipe below
Directions:
In a medium bowl mix Mayo, mustard, pickle juice and a dash of house blend. Be sure it is completely blended.
In a large bowl add the chicken, celery, onions, pickles and house blend. Toss together until well mixed. Fold in the mayo mix and continue folding together until well mixed.
To serve:
On bread of your choice, spread a moderate amount of mayo. Then place chicken mix (about 1 cup or more) and pat to spread across bread slice. Top with any or all of the following if you wish: lettuce, tomato slices, avocado, or any other sandwich “fixins” you like. Top with second slice of bread.
Place on dinner plate and add chips, veggie sticks or slices, and perhaps a cookie for dessert.

*House Blend: One part good quality salt (I like pink salt or non-iodized sea salt) One part garlic powder, and ½ part black pepper. Store in shaker bottle and use at will.

Recipe:
Avocado Salsa Chicken:
Ingredients:
-2 lb chicken breasts
-2-3 cloves of garlic
-3 tbsp olive oil
-1/2 tsp cumin
-1/2 tsp paprika
-salt and pepper
-2 limes
-1/2 cup (minced) fresh cilantro
-1 tomato
-2 avocados
-1/4 red onion
Instructions:
1. Make the marinade for the chicken by whisking together garlic, olive oil, 1/4 cup cilantro, cumin, paprika, the juice of one lime, and salt and pepper
2. Slice the chicken breasts horizontally to cook faster
3. Add marinade to the chicken and allow to marinade between 30 minutes and 12 hours
4. Heat olive oil in the stove and cook the chicken breasts on both sides until golden brown
5.To make the salsa: Dice tomato, avocados, onion, and add the juice of one lime. Add salt and pepper and the rest of the cilantro. Mix
6. Top the chicken with the salsa and serve
Roasted Brussels Sprouts:
Ingredients:
-6-8 tbsp olive oil
-3 cloves of garlic
-Salt and pepper
-2 lbs Brussels sprouts
Instructions:
1. Preheat oven to 450 degrees. Thoroughly wash and dry the Brussels sprouts
2. Cut off the ends and slice in half
3. Toss with olive oil, garlic, salt, and pepper
4. Spread evenly on a baking sheet and roast in the oven for about fifteen minutes. After that, check every four minutes to make sure that the sprouts are roasted but not burnt.
5. Serve and enjoy

Guacamole is a mix of mashed avocado and spices. It is a Mexican recipe. They got their name by combining the names aguacate which is the Spanish word for avacado and ahuacamolli which the Aztec empire named it. Aztec empire were the one who used to consume this fruit at the beginning as it was their favourite fruit. Later when Spanish people started to eat this they named it Guacamole(a”gua”cate+ahua”camolli”)
Ingredients:
Avocados-2
Tomato-1/4 cup(1/2 tomato)
Onion-1/2 or spring onions-1/4-cup
Cilantro-1/4 cup or a handful
Salt
Red chilli flakes
1/2 lemon squeeze
Mix them all together
