How To make Cashew Chicken and Cantaloupe
1 c Chopped cooked chicken
1/4 c Chopped celery
1/4 c Seedless red grapes,halved
1/4 c Canned pineapple tidbits,
-drained 3 tb Purchased tuna salad
-dressing 2 Leaves leaf lettuce
1/4 Cantaloupe, seeded, peeled,
-cut into thin wedges 2 tb Cashews
In medium bowl, combine chicken, celery, grapes and pineapple. Add dressing; stir gently to coat. Place lettuce leaf on each individual serving plate. Arrange cantaloupe wedges over lettuce, creating fan shape. Spoon chicken salad over bottom of cantaloupe fan. Sprinkle with cashews. 2 Servings. Today we're making Cantaloupe Milk(less)shakes!
*This recipe is dairy-free, gluten-free, soy-free, and paleo-friendly with no added sugar.

Here's what you'll need:
1 cantaloupe
2 cups crushed ice
1/2 cup coconut milk ice cream (we used vanilla flavored)
1 cup coconut milk
2 tbsp stevia (optional) (we used Truvia which may taste differently from other brands)
Quick tip! Sniffing your cantaloupe's belly button is a surefire way to know if it's good too use. If it smells sweet: Sweet!
Start out by cutting your cantaloupe into manageable chunks and toss them into the food processor. Add your crushed ice, coconut milk ice cream and coconut milk. If it's still not as sweet as you'd like, add some stevia to taste, and that's it.
This recipe yields about 4 shakes.
*You can adjust the recipe by using almond milk or almond milk ice cream.
