LeCellier in EPCOT makes the best Canadian Cheddar Cheese Soup in existence. Now you can use this copycat recipe for the richest, cheesiest, most delicious soup you'll ever make. It's not hard either!
Ingredients: 1 Pound Bacon- cut into 1/2 inch pieces 1 Medium White Onion- Diced 2 Celery Stalk's- Dices 3 Tbsp Butter 1 1/2 Cup Flour 2 Cups Chicken Stock 1 Cups Milk 1 Pound White Cheddar Cheese- Shredded 1 Tsp Tabasco Sauce 1 Tbsp Worcestershire Sauce 1/2 Cup Canadian Lager- Room Temperature Black Pepper to taste
Instructions: 1. Heat pan or Dutch oven on medium high heat. 2. Cook bacon until lightly browned, about 5 minutes. 3. Add butter celery and onions and cook until soft, about 5 minutes. 4. Add flour and cook while stirring for 3 minutes. 5. Whisk in chicken stock, bring to a boil for 1 minute then reduce heat. Simmer for 12 - 15 minutes stirring occasionally. 6. Add milk and continue to boil for another 15 minutes. 7. Remove from heat, add cheese, Tabasco sauce, Worcestershire sauce, salt and pepper. 8. Blend with immersion blender until the soup is smooth. 9. Enjoy!

Canadian Cheese Soup
For the last video provided through funding from the LHIN, we are doing a recipe sent to me by one of our members. This recipe was easy to make and tastes delicious. Try it with some bacon or ham.
Ingredients: • 1 cup water • 1 large potato, grated • 1 medium onion, diced • 1 medium carrot, grated • 1 stalk of celery, finely chopped • 1 cup of chicken broth • ½ cup of half and half • 1 ½ cups of shredded cheddar cheese • Salt and pepper to taste • Optional: 1/2 cup of cooked crispy bacon diced Instructions: 1. Combine water, potato, onion and celery in a 2 quart casserole dish. 2. Cover with the lid and microwave on high for 12 – 17 minutes or until the potatoes are tender. Stir halfway through. 3. Stir in your chicken broth and half and half and cover once more. 4. Microwave on medium-high (70%) until heated through. Approximately 6-8 minutes. 5. Mix in the cheese, and bacon if using, and stir until melted. 6. Add salt and pepper to taste and serve with crackers.
