what you will be needing
4 tablespoons melted butter
1/2 c. finally diced yellow onion
1 packed tablespoon finally chopped garlic
4 c. chicken stock low sodium if like
2 medium carrots skin removed cut however you like but fairly thin
1 teaspoon season salt
1/2 teaspoon paprika
1/2 teaspoon black pepper
4 c. cubed Yukon gold potato
6 c. broccoli fairly large pieces
1/2 teaspoon celery seed
3 c. whole fat milk
6 tablespoons corn starch
1 7oz can crema found in baking areas not condensed milk
3 c. freshly grated American block cheese
salt to taste
top with crispy bacon and more cheese and a dollop of sour cream....Enjoy❤

Ingredients:
1 large head of broccoli
1.5 cups white Basmati or Jasmin rice
2 crushed and sauteed cloves garlic or 1/2 tsp garlic powder
zest of 1 lemon
2.25 cups broth chicken, vegetable, mushroom all work
1-3 Tbsp crème fraîche
sea salt
pepper
100-150 g melty cheese Swiss, Cheddar, Gruyere

Ingredients
4 tablespoons butter ½ stick
½ medium onion chopped
2-3 cloves garlic minced
4 tablespoon AP flour
2 cups low sodium chicken or vegetable stock
1 tsp kosher salt
½ tsp black pepper
¼ tsp or ground nutmeg, optional
3 cups broccoli florets or 1 large head, cut into small pieces
1 large carrot grated, julienned or finely chopped
2 cups half & half or milk or light or heavy cream
8 oz block grated cheddar cheese or 2 cups (mild, medium, or sharp )
Melt butter in a large dutch oven or pot over medium-high heat. Add the onion and cook 3-4 minutes or until softened and light gold. Add the garlic and saute for another minute.
Add flour and whisk for 1-2 minutes or until the flour begins to turn golden in color. Pour in the chicken stock, broccoli florets, carrots, and seasoning. Bring to a boil then reduce heat to medium-low and simmer for 15 minutes or until the broccoli and carrots are cooked through.
Stir in half & half and cheddar cheese and simmer for another minute. Taste and adjust seasoning if needed.
Serve with toasted crusty bread or in a bread bowl if desired.

How to make Broccoli Cheese Stuffed Chicken Breast?
Broccoli Cheese Stuffed Chicken Breast is filled with a simple broccoli cheese mixture, seared in a skillet, then baked to perfection.
Prep Time : 5 mins Cook Time : 20 mins Total Time : 25 mins
Ingredients
3 large chicken breasts
salt & pepper
1 1/2 tsp garlic powder, divided
1/4 tsp paprika
1 cup broccoli florets, finely chopped
1/2 cup red bell pepper, finely diced
1 cup mild cheddar cheese
1 tbsp mayo
2 tbsp olive oil
Instructions
1. Preheat oven to 425 degrees F.
2. Season both sides of the chicken breasts with salt, pepper, paprika and 1/2 tsp of the garlic powder. Use a sharp knife to cut a slice through the middle of the chicken breasts, but not all the way through, creating a pocket for the filling.
3. For the filling, place the broccoli in a microwaveable dish and add about 2 tablespoons of water. Cover with plastic wrap and microwave for 1 minute. Drain any excess water. To the dish add the bell pepper, cheese, mayo, remaining garlic powder and salt and pepper to taste. Mix until combined, then divide the mixture between the chicken breasts, using a toothpick to secure if necessary.
4. Heat a large, oven safe skillet (I prefer to use a cast iron skillet), over medium heat and add the olive oil. Sear the chicken for 3 to 4 minutes on each side. Cover skillet with foil and bake in preheated oven for 15- 17 minutes, or until chicken reads 165 degrees. Let rest, covered for 5 minutes before enjoying.
Notes
*Since these are large chicken breasts, I usually say 1/2 chicken breast is one serving.
