How To make Barb's Meatloaf with Cheese
1 lb Ground beef
1/2 tb Pepper
3/4 c Cheddar cheese; cubed
1/2 tb Celery seed
1/2 Onion; chopped
1/4 tb Paprika
1/2 Bell pepper; chopped
1/2 c Milk
1 Egg; beaten
1/2 c Bread crumbs; dry
1 tb Salt
OVEN TEMP: 350 DEGREES MIX ALL INGREDIENTS TOGETHER. PLACE IN LOAF PAN. BAKE FOR 1 HOUR 15 MIN. *I LIKE TO FORM THIS IN A BALL AND PLACE IT ON A RACK TO COOK, SO THAT MOST OF THE FAT DRIPS AWAY FROM THE MEAT. THIS MEAT LOAF MAKES GREAT SANDWICHES AND IS FLAVORFUL WHEN COLD.

one cup of diced tomatoes,
3 eggs,
2 cups of breadcrumbs,
and one cup of tomato sauce,
however much you put on top of your meatloaf it's your choice

Stuffed Meatloaf
1 1/2 lbs 80/20 ground chuck
1 slice white bread soaked in 1/2 cup milk
1 egg
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon nutmeg
2 tablespoons butter
1 cup chopped onion
3/4 cup sliced mushrooms
2 tablespoons chopped parsley
1 cup bread cubes*
3/4 cup blue cheese crumbles
1 can cream of mushroom soup
Preheat oven to 350º
-Mix together ground beef, milk soaked bread, egg, 1/2 cup onion, salt, pepper and nutmeg.
-Spread out on foil in large rectangular shape.
-Sauté mushrooms and remaining onions in butter.
-In a bowl, combine sautéed mushrooms and onions with bread cubes and parsley. Spread mixture over meat. Sprinkle evenly with blue cheese crumbles.
-Roll meat up like a jelly roll and place in large baking dish.
-Bake for 1 hour.
-Pour cream of mushroom over meatloaf and bake another 15-20 minutes.
-Let rest 5 minutes
Enjoy!
*Bread Cubes: cut bread into 1/2 x 1'2 cubes and place on a sheet pan. Bake at 200º for 20-30 minutes. Toss the bread at the half way mark.
