Kari Ayam Hijau Thai atau Thai Green Curry Chicken atau …masakan yang penuh dengan pelbagai rasa dari rempah segar dan kering. Warna hijau tu datang dari penggunaan cili hijau, daun selasih, daun limau purut, kulit limau purut dan juga tambahan daun ketumbar jika suka.
Dan rempah tu kita hasilkan sendiri dengan cara menumbuk halus..bila tumbuk, minyak dari semua bahan tu akan keluar , memberikan aroma dan rasa yg cukup unik. Kari ni bersama pati santan pekat yang direneh perlahan2….jadi hasilnya.. kuah Kari Hijau Thai yang pekat berlemak, pedas dan berempah
Bahan-bahan untuk pes rempah (kisar atau tumbuk halus):
2 batang serai
1 inci lengkuas
1-2 biji limau purut (kulit sahaja)
3 ulas bawang putih
1-2 biji bawang merah
1 akar ketumbar
3-4 helai daun limau purut
10-15 tangkai cili padi hijau
8-10 helai daun selasih
1 sudu besar biji ketumbar
1 sudu kecil jintan putih
Bahan-bahan lain:
½ ekor ayam
1 cawan santan pekat (untuk tumis)
3-4 cawan santan
4-5 biji terung bulat hijau
1 genggam daun selasih
4-5 helai daun limau purut
1 sudu besar sos ikan
½ sudu kecil gula melaka
1 tangkai cili merah

Ingredients for spice paste (grind or pound finely):
2 stalks lemongrass
1 inch galangal
1-2 kaffir lime peel
3 cloves garlic
1-2 shallots
1 coriander root
3-4 pieces of kaffir lime leaves
10-15 green bird’s eye chilli
8-10 pieces of basil leaves
1 tablespoon coriander seeds
1 teaspoon white cumin
Other ingredients:
½ chicken
1 cup thick coconut milk (for sauteing)
3-4 cups of coconut milk
4-5 round green eggplant
1 handful of basil leaves
4-5 leaves of kaffir lime
1 tablespoon fish sauce
1/2 teaspoon of palm sugar
1 red chilli
